Freeze Funfetti Cookies until cold and firm.

Place a cookie upside down on work surface.

Using an ice cream scooper, get a ½ cup scoop of vanilla ice cream and place on cookie.

Place another cookie on top of ice cream and gently press together.

Sprinkle sprinkles on the sides of the ice cream sandwich.

Place in freezer to firm up.

Wrap individually in plastic wrap if not eating right away.
