The BEST Peanut Butter Rice Krispie Treats
These chocolate covered Peanut Butter Rice Krispie Treats are made with the perfect ratio of cereal, marshmallows, butter, and peanut butter for extra gooey, chewy bars. A little extra butter and marshmallow, combined with creamy peanut butter, makes these the BEST Peanut Butter Rice Krispies Treats! And that chocolate on top - oh yeah!
Ingredients in Chocolate Peanut Butter Rice Krispie Treats
Rice Krispies – I use 5 cups of Rice Krispies cereal in this recipe for Rice Krispie Treats with peanut butter and chocolate, a little less than the 6 cups that are usually called for, for an extra chewy, gooey treat.
Marshmallows – a 10 ounce bag of regular or mini marshmallows. The mini ones melt faster, but the big ones work too.
Butter – salted butter adds a depth of flavor to the Rice Krispy treats. If you don’t have salted butter, add a pinch of salt to the butter when melting.
Peanut Butter – I use creamy peanut butter, but chunky is ok, too.
Vanilla – Add a teaspoon of vanilla for more yummy flavor.
Chocolate chips – I use 3 cups for a thick chocolate topping. If you don’t want it so chocolatey, use 2 cups or an 11oz bag of chocolate chips. You can also leave the chocolate topping off altogether.
How to make Peanut Butter Rice Krispie Treats
Melt the butter in a large pan over medium-low heat. Once melted, add the marshmallows. Stir the mixture until the marshmallows are completely melted. Stir in the peanut butter and vanilla.
Remove from heat, then immediately fold in the cereal. Make sure each piece of cereal is coated with the peanut butter/marshmallow mixture.
Transfer mixture to 9 by 13-inch baking pan that has been lined with parchment paper and sprayed with nonstick spray. Press the mixture into the pan (lightly spray your hands with non-stick cooking spray to avoid the mixture sticking to your hands). Pour the melted chocolate over the mixture and let cool to harden.
To make this Recipe for Peanut Butter Rice Krispie Treats in the Microwave
You can also melt the marshmallow mixture in the microwave:
- Put the butter and marshmallows in a large heat-proof bowl.
- Microwave for 40 second intervals, stirring between each interval, until they are both melted.
- Stir in the peanut butter and vanilla. Then stir in the Rice Krispies.
Tips for the BEST Peanut Butter Rice Krispie Treats
- Use fresh marshmallows - The secret to soft and chewy Rice Krispies Treats is to use fresh marshmallows. Stale, dry, or sticky marshmallows will make your treats too hard and crunchy. Use a fresh, unopened bag that hasn’t been hiding in the back of your cupboard.
- Cook over medium-low heat – resist the urge to rush the melting process or the marshmallows will caramelize and toughen.
- Don’t overcook the marshmallows - Remove them from the heat as soon as they’re just melted or they’ll get hard.
- Don’t over-stir the mixture once you’ve added the cereal or the cereal may break and the bars will be too dense.
- Don’t press too hard – Don’t press the Rice Krispie mixture in the pan too firmly or the treats will be compacted and hard. Press it in gently with greased fingers or a greased rubber spatula.

What kind of chocolate chips? Semi sweet or milk chocolate?
Hi Crystal, Use either one, whichever you prefer. Some like semi sweet to balance the sweetness of the rice krispie treats. My kids prefer it with milk chocolate.
Why didn’t my milk choc chips harden?
★★★★★
Hi Ruthellen, if the room is warm, the melted chocolate will take longer to harden. Sticking the pan in the refrigerator will speed things up!
