Description

Quick and Easy Apple Crisp is bursting with sweet, juicy apples and a crunchy oat topping. This easy fruit crisp recipe is perfect served warm from the oven topped with a scoop of vanilla ice cream. The quintessential fall dessert recipe!


Ingredients

For the topping:

  • 1/2 cup butter softened ((4oz, 113g))
  • 3/4 cup firmly packed brown sugar ((5.25oz, 149g))
  • 2/3 cup all-purpose flour ((3.3oz, 94g))
  • 3/4 cup old-fashioned rolled oats ((2.6oz, 74g))
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

For the apple filling:

  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 2 lbs (900g) apples, peeled, cored, and sliced into 1/8 inch slices (*see note)
  • 1 tablespoon cornstarch
  • 1/4 teaspoon cinnamon
  • 3 tablespoons brown sugar ((1.3oz, 37g))

Instructions

  1. Preheat the oven to 350°F.

For the topping:

  1. Combine the butter, brown sugar, oats, flour, cinnamon, and salt and press with your fingers until thoroughly combined and clusters form. Refrigerate until needed.

For the apple filling:

  1. Combine 1 tablespoon of lemon juice and 1 tablespoon of water in a large mixing bowl.
  2. Peel, core, and slice the apples into 1/8 inch slices, tossing them in the lemon water as you add them to the mixing bowl.
  3. Sprinkle the apple slices with the cornstarch, brown sugar, and cinnamon. Toss until evenly coated. Put in a baking dish.

To bake:

  1. Remove the topping from the refrigerator, crumble into clusters, and sprinkle on top of apples.
  2. Bake on the middle rack for 40-50 minutes or until the fruit is bubbly the top is golden brown. Cover top with a tent of foil if the topping browns too quickly.
  3. It’s done when the filling is hot, bubbly, and starting to thicken. (It will thicken further as it cools.)
  4. Cool for about 10 minutes then serve warm with a scoop of vanilla ice cream.

Notes

I've used Honeycrisp here. Granny Smith apples are also an excellent choice. Be sure to use a sturdy apple that retains it's shape while baking.
