The BEST Peanut Butter Rice Krispie Treats

These chocolate covered Peanut Butter Rice Krispie Treats are made with the perfect ratio of cereal, marshmallows, butter, and peanut butter for extra gooey, chewy bars. A little extra butter and marshmallow, combined with creamy peanut butter, makes these the BEST Peanut Butter Rice Krispies Treats! And that chocolate on top - oh yeah!

    Ingredients

Rice Krispies โ€“ I use 5 cups of Rice Krispies cereal in this recipe for Rice Krispie Treats with peanut butter and chocolate, a little less than the 6 cups that are usually called for, for an extra chewy, gooey treat.

Marshmallows โ€“ a 10 ounce bag of regular or mini marshmallows. The mini ones melt faster, but the big ones work too.

Butter โ€“ salted butter adds a depth of flavor to the Rice Krispy treats. If you donโ€™t have salted butter, add a pinch of salt to the butter when melting.

Peanut Butter โ€“ I use creamy peanut butter, but chunky is ok, too.

Vanilla โ€“ Add a teaspoon of vanilla for more yummy flavor.

Chocolate chips โ€“ I use 3 cups for a thick chocolate topping. If you donโ€™t want it so chocolatey, use 2 cups or an 11oz bag of chocolate chips. You can also leave the chocolate topping off altogether.

ingredients for rice krispie treats: marshmallows, peanut butter, rice krispies, chocolate chips, butter, vanilla

How to make Chocolate Peanut Butter Rice Krispie Treats

Melt the butter in a large pan over medium-low heat. Once melted, add the marshmallows. Stir the mixture until the marshmallows are completely melted. Stir in the peanut butter and vanilla.

Remove from heat, then immediately fold in the cereal. Make sure each piece of cereal is coated with the peanut butter/marshmallow mixture.

Transfer mixture to 9 by 13-inch baking pan that has been lined with parchment paper and sprayed with nonstick spray.  Press the mixture into the pan (lightly spray your hands with non-stick cooking spray to avoid the mixture sticking to your hands). Pour the melted chocolate over the mixture and let cool to harden.

    To make in the Microwave

You can also melt the marshmallow mixture in the microwave:

    • Put the butter and marshmallows in a large heat-proof bowl.
    • Microwave for 40 second intervals, stirring between each interval, until they are both melted.
    • Stir in the peanut butter and vanilla. Then stir in the Rice Krispies.

    Tips

    • Use fresh marshmallows - The secret to soft and chewy Rice Krispies Treats is to use fresh marshmallows. Stale, dry, or sticky marshmallows will make your treats too hard and crunchy. Use a fresh, unopened bag that hasnโ€™t been hiding in the back of your cupboard.
    • Cook over medium-low heat โ€“ resist the urge to rush the melting process or the marshmallows will caramelize and toughen.
    • Donโ€™t overcook the marshmallows - Remove them from the heat as soon as theyโ€™re just melted or theyโ€™ll get hard.
    • Donโ€™t over-stir the mixture once youโ€™ve added the cereal or the cereal may break and the bars will be too dense.
    • Donโ€™t press too hard โ€“ Donโ€™t press the Rice Krispie mixture in the pan too firmly or the treats will be compacted and hard. Press it in gently with greased fingers or a greased rubber spatula.

    FAQs

Why do my Rice Krispies Treats get hard?

Be sure to use fresh marshmallows and cereal. Also, donโ€™t press the treats too firmly into the pan.

Do Rice Krispie Treats with peanut butter need to be refrigerated?

Donโ€™t refrigerate Rice Krispie treats or they can get hard. Store them in an airtight container at room temperature.

How long do Peanut Butter Chocolate Rice Krispies Treats keep?

Rice Krispies treats will be the freshest if kept in an airtight container at room temperature up to 3 days. You can keep them for a few days longer, but they will start to get harder.

Can you freeze Rice Krispie Treats?

While fresh is best, Ride Krispie treats can be frozen. To freeze them, put layers of parchment paper between layers so they donโ€™t get stuck together then store in an airtight container up to 2 months.

Thaw completely at room temperature before enjoying.

Can Rice Krispie Treats be made in a 9 by 9-inch baking dish?

Rice Krispie Treats can be made in a smaller pan such as an 8 by 8-inch, 9 by 9-inch, or 7 by 11-inch pan. They will be thicker. If using a smaller pan, reduce the amount of chocolate used in the topping or it may be too thick.

    Are Rice Krispie Treats gluten-free?

The classic Kelloggโ€™s Rice Krispies are not gluten-free, but you can substitute another crispy rice cereal that is.

Why didnโ€™t my milk choc chips harden?

Hi Ruthellen, if the room is warm, the melted chocolate will take longer to harden. Sticking the pan in the refrigerator will speed things up!

What kind of chocolate chips? Semi sweet or milk chocolate?

Hi Crystal, Use either one, whichever you prefer. Some like semi sweet to balance the sweetness of the rice krispie treats. My kids prefer it with milk chocolate.
