Ingredients in this Strawberry simple Syrup recipe:
- Strawberries – use fresh, ripe, in-season strawberries for the best flavor. You can also use frozen strawberries.
- Sugar – sugar adds sweetness and forms the base of the simple syrup. You can also use a non-sugar sweetener, like erythritol (Lakanto is my current fave).
- Water - used in a 1:1 ratio to make a simple syrup
Optional ingredients:
- A tiny pinch of salt brings out the flavor of the strawberries.
- If your strawberries need a boost of flavor, a strip of lemon peel can be added when simmering the berries. Alternatively, you can add a bit of lemon juice to taste to the finished syrup
How to make Strawberry Syrup
Clean and hull the strawberries, then slice them into thin slices.
In a saucepan, combine the strawberries, sugar, and water. Bring to a boil over medium-high heat, then turn the heat to low and simmer for 15 minutes. The berries will soften and lose their bright color and the liquid will be deep red.
Strain the strawberries out of the simple syrup through a fine mesh strainer, being careful not to press down on the berries or the syrup will be cloudy.
You can save the strawberries for topping oatmeal or stirring into yogurt.
Store in the refrigerator for up to 3 weeks.
There will be some foam on the top of the syrup after simmering and straining. You can spoon this off if you like.
Strawberry Simple Syrup Variations and add-ins
- Vanilla – a vanilla bean or a bit vanilla bean paste or extract can be added for a richer flavor, especially if using on pancakes and waffles.
- Herbs and spices – try adding mint, rosemary, basil, or crushed cardamom pods when simmering the strawberry infused syrup
- Citrus – simmer the syrup with strips of lemon or orange peel
- Floral – add floral notes by simmering with a few rose petals or lavender buds
- Sugar free strawberry syrup - use a non-sugar sweetener, like erythritol, in place of the sugar (Lakanto is my current fave)

Can I use less sugar?

- 1 lb strawberries (about 3 cups when sliced)
- 1 cup granulated sugar
- 1 cup water

Instructions

So I have a ton of strawberry juice. Is there a good ratio to make suryp?
Hi Samantha, it would be hard to know the ratio without knowing if the strawberry juice is sweetened or not. You could try a 1 to 1 ratio of juice to sugar or a 2:1 ratio of juice to sugar for starters. If the juice is already sweetened it will be a much sweeter syrup.
