Chocolate Raspberry Yogurt Parfait filled with layers of crunchy chocolate granola, creamy yogurt, and a fresh, sweet-tart raspberry sauce. Perfect for breakfast or dessert.
This Chocolate Raspberry Yogurt Parfait has become something of an obsession of mine. I know, obsession seems like an exaggeration. But considering that I’ve been eating these for breakfast, afternoon snack, and dessert (and sometimes bedtime snack) …..
They’re very addictive.
The components for this Chocolate Raspberry Yogurt Parfait are easy to prepare and easy to keep on hand for whenever the craving strikes. Or when you want breakfast. Whichever comes first.
It all starts with the chocolatiest Double Chocolate Granola. Sweet, crunchy, and super chocolatey. It’s baked with a chocolatey coating. Then chocolate chips are sprinkled on top of the warm granola. You can either let the chips cool and they will keep their shape, while being fused to the granola. Or you can stir the melted chips into the granola and all of the clusters will be covered with chocolate. A sprinkling of raw sugar after everything has cooled gives added crunch.
And what could be better with sweet, crunchy chocolate than a tart, intensely raspberry, Raspberry Sauce. My Raspberry Sauce that Practically Makes Itself was developed specifically with this parfait in mind. It’s perfectly syrupy with pieces of raspberries and a pure, fresh raspberry flavor. And as its name implies, it practically makes itself. It’s made with frozen raspberries that are macerated in sugar. There’s no stove-top cooking involved so the berries retain their fresh flavor.
There are several choices for the yogurt to use in this parfait: plain, Greek, or vanilla. I like mine made with plain yogurt. I like the light and fluid texture of plain yogurt. I also like its tangy flavor. The amount of sugar I use in the Raspberry Sauce is perfect (for me) with unsweetened yogurt. Of course, adjust the amount of sugar to your own taste. If you use a sweetened vanilla yogurt, you may want to put less sugar in the Raspberry Sauce.

These look great. I would like to make them for a brunch. Can I make these ahead (by an hour or so) without the granola becoming soggy since they are covered in chocolate?
Thanks!
Kelly
Hi Kelsey, they could probably be made a little ahead of time!

Looks both refreshing and (as you note) addictive, Kelly! And somehow light and satisfying at the same time!
Kelly
It is surprisingly light and satisfying, David. I don't usually like anything sweet for breakfast, but somehow this is just as wonderful for dessert as it is for breakfast. I guess I'll just have to keep eating it until I figure it out! Thanks so much!
