A family favorite
Youโre gonna love this Creamy Tuscan Chicken Pasta! It has a permanent place on the dinner rotation at our house. Itโs so full of flavor and so delicious. Itโs got the perfect combination of flavors โ starting with the creamiest, garlicky parmesan sauce with a touch of garlic. (I canโt call it garlicky. Iโm working on a post for a Middle Eastern garlic sauce to share with you. Itโs garlic INTENSE. A knock-your-socks-off garlicky. This pasta sauce has a friendly amount of garlic.)

One dish meal
This Creamy Tuscan Chicken Pasta is a one dish meal. Itโs loaded with slices of chicken and lots of veggies โ sundried tomatoes, baby spinach, and red pepper. I love it left-over the next day for lunch (and breakfast). It makes a perfect meal prep idea.

Ready in under 30 minutes
Creamy Tuscan Chicken Pasta is so easy to make. Sautรฉ the chicken, sautรฉ the veggies, add the cream, broth, and cheese. Toss in the baby spinach and pasta. Bam! Youโre done. Donโt you love a delicious meal thatโs ready in under 30 minutes? Thatโs magic, my friends.

Chicken breasts are sautรฉed in a little oil until golden brown and cooked through. I use oil from the jar of sundried tomatoes, itโs so flavorful.
It's totally optional, but I like to flatten the chicken breasts with a kitchen mallet to even them out and make them thinner, like cutlets. If they are thick, I cut them in half horizontally first.

Remove the chicken from the pan, add a little more oil, and sautรฉ some chopped onion until soft. Add the diced red bell peppers and sautรฉ for a few minutes. When the peppers are almost soft, add the sundried tomatoes, garlic, and Italian seasoning and let sautรฉ for one minute. Deglaze the pan with chicken broth, scraping up any browned bits. Add the cream and bring to a simmer. Let it simmer for about 2 minutes, then add the parmesan cheese and cook until melted. Turn off the heat and stir in the baby spinach. Salt and pepper to taste.

Combine the chicken and sauce with hot buttered pasta and Enjoy!

Creamy Tuscan Chicken Pasta
Ingredients
For the Pasta:
- 1 pound penne or other pasta (454g)
- 1 tablespoon butter (.5oz, 14g)
For the Chicken and Sauce:
- 2 tablespoons olive or vegetable oil
- 1 ยฝ pounds chicken breasts (454g)
- 1 medium onion diced
- 1 red bell pepper diced
- 8.5 ounce sundried tomatoes in oil, drained (241g (yields about 6oz, 170g))
- 5 cloves garlic finely minced
- 1 teaspoon dried Italian seasoning (or oregano)
- ยพ cup chicken broth (6oz, 170g)
- 1 ยฝ cup cream or half and half (12oz, 340g)
- ยพ cup parmesan cheese (3oz, 85g)
- 6 ounce bag of baby spinach leaves whole or roughly chopped (170g)
- Red pepper flakes salt, and pepper to taste
Instructions
For the Pasta:
- Bring a large pan of salted water to a boil. Add the pasta and cook until al dente. Drain and toss with butter.
For the Chicken and Sauce:
- Optional: For quicker, more even cooking, slightly flatten breasts with a kitchen mallet. If they are very thick, slice them in half horizontally before flattening.ย
- Season with salt and pepper.
- Heat a skillet over high heat. When pan is hot, add 1 tablespoon oil.
- When oil is hot, put chicken breasts in pan and cook until golden brown on both sides and cooked through. Remove chicken from pan.
- Let chicken cool for a few minutes, then slice. Set aside.
- Add remaining tablespoon oil to pan. Add onions and cook until softened.
- Add red bell pepper and cook until almost softened.
- Add the garlic, sundried tomatoes, and Italian seasoning. Stir, and cook for about 1 minute.
- Deglaze pan with broth, scraping bottom to release any bits sticking to the bottom of the pan.
- Add cream and bring to a simmer. Allow to simmer for 2 minutes. Add parmesan and cook until melted.
- When cheese is melted turn off the heat and stir in baby spinach.
- Salt and pepper to taste.
- Combine pasta, chicken, and sauce.
- Serve.
Notes
- Baby spinach cooks down so nicely that I don't often spend time chopping it first.

I love the combination of orange and cranberries! Itโs so bright and cheerful! And this Cranberry Orange Walnut Bread is amazing!

To make this Cranberry Orange Walnut Bread, butter is cut into the dry ingredients. This can be done by hand with a pastry cutter or in a food processor.
The wet ingredients are gently mixed into the dry ingredients, and the chopped cranberries and roasted chopped walnuts are folded in.
It is baked in a 350 degree F oven for about an hour, until it is golden brown.
It's left to cool and then glazed with the Orange Walnut Glaze.

This Butternut Squash Ravioli is so delicious and so satisfying. Roasting the butternut squash deepens and sweetens the flavor, giving a touch of caramelized flavor. Adding mascarpone makes a creamy, decadent filling. Parmesan and a small amount of sautรฉed onion and garlic add a savory fragrance without overwhelming the delicate flavor of the butternut squash.
The ravioli is topped with browned butter, crispy sage, and crunchy bacon. So many flavors and textures make this Butternut Squash Ravioli an unforgettable dish.

The puree is combined with a small amount of sautรฉed onion and garlic, parmesan, and mascarpone.
I like to puree it all again in the food processor to make sure it's all smooth.
To make this Butternut Squash Ravioli easy enough for a weeknight dinner, dumpling (gyoza), eggroll, or wonton wrappers are used instead of fresh pasta dough. You can roll out fresh pasta dough if you prefer, this ravioli is certainly deserving of the best treatment you have time for. But I find that dumpling wrappers come in a very close second. So close in fact, that my kids couldn't tell the difference.
Dumpling (gyoza) wrappers are thicker and chewier than wonton wrappers and give a nice bite to the ravioli, similar to pasta dough. I use the smaller ones (3 ยฝ inches) and they make the perfect size. If you canโt find dumpling wrappers, wonton or eggroll wrappers can be substituted. They are thinner so they wonโt be as chewy. The wonton wrappers will make larger, jumbo-sized ravioli. An eggroll wrapper cut in four smaller squares make a nice sized smaller ravioli. I definitely recommend the dumpling wrappers if you can find them. I buy them in my local Asian market.
I get about 600 grams of filling from this recipe. At 2 teaspoons of filling each, that makes about 60 ravioli. That will differ depending on the size of wrapper you use and how much filling you put in.
Cook the ravioli, about 4 at a time, in salted boiling water for about 3 minutes. Toss with the browned butter and top with freshly grated parmesan cheese and crumbled bacon.
This recipe makes about 60 3 ยฝ inch raviolis. If you don't want to cook all of them at once, they can be frozen. Freeze in a single layer until frozen, then store in a plastic Ziplock bag. They can be cooked directly from the freezer, but they may need to cook slightly longer. I love keeping a batch of these Butternut Squash Ravioli in the freezer. It makes a super quick dinner for busy days - or anytime I get a craving for them!

In my canned pumpkin vs. fresh pumpkin puree
The taste testers unanimously preferred the kabocha squash and butternut squash pies for their deep, sweet, pumpkin flavor and their incredible, silky smoothness.
The kabocha squash and butternut squash made velvety smooth pies with a richer, pumpkin flavor โ just how the perfect Pumpkin Pie should taste.
I made the pie on the back of the Libby's can for years. I started making 
Kabocha squash or butternut squash puree is made by roasting and pureeing the squash. Check out my post on 
The pumpkin/squash is cut in half and the seeds are scraped out. It is lightly salted and roasted cut side down for almost an hour. Roasting helps dry out some of the moisture and deepens the flavor. After the squash cools, it is pureed in a food processor.
The pie crust is prebaked to keep it flaky and prevent it from getting soggy. Check out my step by step photo tutorial on

In my 
Kabocha squash is a Japanese pumpkin with a beautiful color, a sweet flavor, and a lovely, fluffy texture. It makes a silky, rich, velvety smooth filling for pumpkin pie.
Lightly salt the inside of the pumpkin. Place the pumpkin cut-side down on a parchment lined baking sheet, and bake in a 400 degree F oven for 35-50 minutes until the pumpkin is soft and nearly collapsing. The sugar (pie) pumpkin will release a lot of water during baking so use a rimmed baking sheet. The butternut and kabocha squash have a higher sugar content so they will begin to caramelize on the bottoms.
Remove the pumpkins from the oven and let cool until they can be handled. The skin should easily peel away from the flesh, otherwise, scoop out the flesh with a spoon.
Puree the pumpkin in a food processor until smooth.
Homemade pumpkin puree can be refrigerated for several days or frozen.
