    How to make Creamy Artichoke Chicken Breasts

    Sautรฉ chicken breasts in a little oil until golden brown. Itโ€™s optional, but you can dust them with flour first for a crunchier coating that browns beautifully.

    Creamy Artichoke Chicken Breasts

    Remove the chicken from the pan and sautรฉ finely chopped onion and chopped red pepper until they soften. Stir in minced garlic and let it cook for a minute. Add the chicken broth (I use water and a bouillon cube) and cream and bring to a simmer. Let simmer for one minute, then turn off heat. Whisk in parmesan, adding it slowly to the pan. Whisk until the parmesan is melted and incorporated into the sauce. Whisk in 1 tablespoon lemon juice. Salt and pepper to taste. Gently stir in drained artichoke hearts and parsley.

    Ingredients
      

    • 1 tablespoon olive or vegetable oil
    • 1 pound chicken breasts (454g)
    • Salt and pepper to taste
    • ยผ cup all-purpose flour optional
    • 1 medium onion diced
    • 1 red bell pepper diced
    • 4 cloves garlic finely minced
    • ยพ cup chicken broth (6oz, 170g)
    • ยพ cup cream or half and half (6oz, 170g)
    • ยพ cup parmesan cheese (1.5oz, 43g)
    • 1 batch Easy Marinated Artichoke Hearts drained (*see note)
    • 1 cup chopped fresh parsley (1oz, 28g)
    • 1 tablespoon lemon juice or to taste
    • Salt and pepper to taste

    Instructions
     

    • For quicker, more even cooking, slightly flatten breasts with a kitchen mallet. If they are very thick, slice them in half horizontally before flattening. Season with salt and pepper.
    • (Optional: dust chicken breasts lightly in flour.)
    • Heat a skillet over high heat. When pan is hot, add ยฝ tablespoon oil (If using optional flour, use an additional tablespoon oil.)
    • When oil is hot, put chicken breasts in pan and cook until golden brown on both sides and cooked through. Remove chicken from pan.
    • Add remaining ยฝ tablespoon oil to pan. Add onions and cook until softened.
    • Add red bell pepper and cook until almost softened.
    • Add the garlic. Stir, and cook for about 1 minute.
    • Deglaze pan with broth, scraping bottom to release any bits sticking to the bottom of the pan.
    • Add cream and bring to a simmer. Allow to simmer for 1 minute. Turn off heat.
    • Slowly add parmesan while whisking and whisk until melted and incorporated into sauce.
    • Gently stir in drained artichoke hearts and parsley.
    • Add lemon juice to taste. You may not need the whole tablespoon if the artichoke hearts are lemony enough.
    • Salt and pepper to taste
    • Return chicken to pan and serve.

    Notes

    • Easy Marinated Artichoke Hearts are quick and easy to make. Check out my recipe here, or follow these directions.
    • Drain and rinse a 14 ounce can of artichoke hearts canned in water. (Or you can use 8.5 ounces of frozen artichoke hearts.)
    • Quarter the artichoke hearts and toss with 2 tablespoons lemon juice, 4 tablespoons olive oil, and 1 teaspoon dried oregano.
    • Add salt, pepper, and chili flakes to taste. Let sit a few minutes before using.
    • After draining the artichoke hearts, the dressing can be used in salads or over vegetables.
    • I taste the sauce before putting in the lemon juice. Depending on how much lemon is still clinging to the artichoke hearts, you may want to add less than the full tablespoon of lemon juice. Add according to your own taste.

    Like many recipes (I eventually found), I first thought to make this pasta dish using a thinned out spinach artichoke dip as the sauce. The only problem was that it turned out a little too thick and goopy.     • 1 tablespoon butter (.5oz, 14g)

    For the Sauce:

    • 2 tablespoons olive oil or butter (1oz, 28g)
    • 1 medium onion diced

    • ยพ cup chicken broth (6oz, 170g)
    • 1 ยฝ cup cream or half and half (12oz, 340g)
    • ยพ cup finely grated parmesan cheese (3oz, 85g)
    • 6 ounce bag of baby spinach leaves whole or roughly chopped (170g)
    • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
    • 14 oz artichoke hearts in water (397g drained, rinsed, and quartered)
    • Red pepper flakes salt, and pepper to taste

    Instructions
     

    For the Pasta:

    • Bring a large pan of salted water to a boil. Add the pasta and cook until al dente. Drain and toss with butter.

    For the Sauce:

    • Heat olive oil or butter in a skillet over medium heat.
    • Add onions and cook until softened.
    • Add the garlic. Stir and cook for about 1 minute.
    • Deglaze pan with broth, scraping bottom to release any bits sticking to the bottom of the pan.
    • Add cream and bring to a simmer. Allow to simmer for 2 minutes.
    • Turn off heat and whisk in parmesan until melted.
    • Stir in baby spinach. Gently stir in artichoke hearts.

    The chewiness comes from a little more all-purpose flour (that 2 to 1 fat to ratio flour), whose proteins provide โ€œbiteโ€ and whole eggs, whose whites give structure and โ€œset.โ€ A pinch of baking powder gives them an ever-so-slight rise.     How to make homemade fudgy, chewy brownies from scratch

    These Fudgy, Chewy Brownies couldnโ€™t be easier to make. While you could make them in one bowl, I like to make them in two. Overmixing the batter causes the gluten to develop, creating a tougher brownie. To make sure they are evenly combined without having to over mix them, whisk the dry ingredients together in a bowl before adding them to the wet ingredients.

    Sugar, eggs, and vanilla are whisked together in a bowl. The melted and cooled chocolate and butter are then whisked in until combined. The dry ingredients are folded in with a wooden spoon or rubber spatula until there are no dry streaks.

    If adding extra chocolate in and on top of the brownies, stir some in. Pour the batter into a prepared pan and sprinkle with chopped chocolate, if using.

    Itโ€™s difficult to give an exact number of minutes. All ovens are different, with hot and cold spots. Some ovens run hotter, and some run cooler. No oven temperature is ever stable, it has to drop several degrees below the stated temperature before the heating element kicks in and blasts the temperature several degrees above the stated temperature. This happens over and over again. Ovens also go out of whack over time and need adjusting.

    Brownies โ€œcarry-over bakeโ€ quite a bit (meaning that theyโ€™ll continue to cook after you take them out of the oven), and those with an extremely high quantity of chocolate will โ€œset upโ€ as they cool. Take the brownies out even a few minutes before you feel that they are fully done. And whatever you do, donโ€™t overbake them.

    When baking, think of timings as suggestions. I set my timer about 20 percent earlier than what the recipe states. If a recipe calls for 30 minutes, I check it after about 24 minutes. Itโ€™s better to see whatโ€™s going on early rather than too late.

    To tell if the brownies are done, have a look at them. They will start to pull away from the sides somewhat.  When the top is dry and set, give the pan a little jiggle. If itโ€™s too wiggly, itโ€™s still too raw underneath the surface.

    I also like to start checking the brownies early with a toothpick. That way I can see the changes as they happen. The first toothpick shows that the batter is still raw. This was at about 20 minutes in my oven. The second toothpick has a little less batter on it, showing that they are setting up. The third toothpick shows even less batter and some crumb on it. Thatโ€™s when I take it out of the oven. If the toothpick is clean, the brownies are overbaked.

    Let the brownies cool for about an hour for neat slices. This allows the chocolate to set and chewiness to develop. The longer they cool, the neater the slices will be.

    Ingredients
      

    • ยพ cup butter melted and cooled (6oz, 170g)
    • 3 ounces unsweetened chocolate melted and cooled (85g)
    • 3 large eggs
    • 1 ยฝ cups granulated sugar (10.5oz, 298g)
    • 1 cup minus 1 tablespoon all-purpose flour (4.7oz, 133g)
    • 1 ยฝ tablespoons unsweetened alkalized cocoa powder
    • โ…› teaspoon baking powder
    • ยผ teaspoon salt
    • 6 - 8 ounces semisweet or bittersweet chocolate chunks to taste (170-227g)

    Instructions
     

    • Preheat oven to 350 degrees F.
    • Prepare an 8 inch by 8 inch baking pan, see note, and spray the inside with cooking spray.
    • In a medium mixing bowl, whisk eggs and sugar until blended.
    • Add cooled melted butter and melted chocolate and whisk to combine.
    • Combine dry ingredients in bowl and sift over chocolate mixture. Stir with a wooden spoon or rubber spatula just until combined. Do not over mix.
    • Add semisweet or bittersweet chocolate chunks and stir gently to combine.
    • Pour into baking pan and smooth the top. Sprinkle the rest of the chocolate chunks on top.
    • Bake in 350 degree F oven until set, about 28 minutes. Be careful not to overbake or the brownies will not be fudgy. They should be slightly underdone. See above for more details. A toothpick inserted into the center will come out streaked with some batter and maybe a crumb or two. If it comes out clean, theyโ€™re overbaked.
    • Let the brownies cool for about an hour for neat slices. This allows the chocolate to set and chewiness to develop. The longer they cool, the neater the slices will be.

    Notes

    • I use a baking pan with a removable bottom which comes in handy for easily and cleanly removing brownies and bars from the pan. I line only the bottom with a square of baking parchment.
    • If you don't have a removable bottom pan, you can line the baking pan with baking parchment aluminum foil, leaving an overhang on two opposite sides, so that the brownie lifts out neatly.

    This Cheesy Philly Cheesesteak Bread is fantastic. Itโ€™s so full of flavor. Iโ€™ve used three cheeses here for a burst of cheesy goodnessโ€“ provolone, cheddar, and white cheddar. Strips of steak are sautรฉed in a very hot skillet to get some crispy brown edges while still staying juicy. Sautรฉed bell peppers and onions are added for their incredible flavor.     Make ahead of time

     You can assemble it the night before, and just pop it in the oven before the game. No need to come home from work and mess around in the kitchen. Speaking of which, it makes an excellent make-ahead dinner.

     The unbaked breads can be frozen and popped into the oven whenever the munchies strike. This is a huge plus for my kids. Theyโ€™re forever opening the fridge and complaining thereโ€™s nothing to eat. They can also be frozen after baking and reheated in the microwave. I make a big batch to keep in the fridge for a few days. Theyโ€™re excellent reheated for lunch (or breakfast).

    How to make

    Bell peppers and onions are sliced and sautรฉed in a little oil until they are the desired softness. I like mine with a bit of firmness. If you like them completely softened, just sautรฉ them a little longer. Iโ€™ve used red bell peppers and red onions here, but you can use any color bell pepper or onions.

    In a really hot skillet, I like to use my cast iron pan, sear the meat until itโ€™s nicely browned on one side then flip over and let cook just until the meat is almost done. This will be done pretty fast if your pan is hot enough. You donโ€™t want to cook it so slow that it doesnโ€™t brown or overcooks. Donโ€™t overcrowd the pan or it wonโ€™t brown. I do mine in two batches.

    A French baguette is sliced in half lengthwise, then in half crosswise so it fits in the pan. You can use other types of bread to make this Cheesy Philly Cheesesteak Bread. Just pick one that is not too thick. I usually use French bread or ciabatta.  You can pull out some of the inside of the bread to make a little nest to hold the toppings, especially if your bread is thicker. You can also just press down the insides of the bread, as I have done in the photos.

    I like to spread a little mayo on the bread before filling it, but if you hate mayo, you can skip it. I find it makes the filling more luscious and moist.

    Layer some provolone cheese on top of the bread, then the peppers and onions, and then the steak. Iโ€™ve topped mine with a mix of cheddar and white cheddar cheeses because they give fantastic flavor. If you prefer, you can just use more provolone or any other cheese that melts well. I buy a block of cheddar cheese and grate it myself. Sometimes I have trouble melting pre-shredded cheeses because they have an anti-caking agent on them.

    After your bread is all topped, heat it on the top rack of a hot oven (400F) for a few minutes until the cheese is nicely melted. You can serve them whole or cut up into appetizer-sized pieces.

    • 2 tablespoons vegetable oil like canola or sunflower
    • 2 bell peppers sliced
    • 2 onions sliced
    • 1 lb sirloin steak, sliced thin (more if you like it meaty) 500g
    • Salt and pepper to taste
    • Mayonnaise optional
    • 8 slices provolone cheese or as necessary to fit your bread
    • 10 ounces shredded cheddar cheese (see note *) 283g

    Instructions
     

    • Heat oven to 400F and place rack in top third of oven.
    • Heat oil in a big skillet or cast iron pan.
    • Sautรฉ bell peppers and onions until they are the desired softness. Remove from pan.
    • Heat the skillet over high heat until it is very hot.
    • Add the steak and sear until itโ€™s nicely browned on one side, then flip over and let cook just until the meat is almost done. This will be done pretty fast if your pan is hot enough. You donโ€™t want to cook it so slow that it doesnโ€™t brown or overcooks. Donโ€™t overcrowd the pan or it wonโ€™t brown. I do mine in two batches.
    • Slice the baguette in half lengthwise, then in half crosswise so it fits in the baking pan. You can pull out some of the inside of the bread to make a little nest to hold the toppings, especially if your bread is thicker.     Notes

    • Iโ€™ve used here an 11oz (310g) French baguette that is 24 inches long. You can substitute another bread that is not very thick, like ciabatta, or French bread of a different size.
    • Iโ€™ve topped mine with a mix of cheddar and white cheddar cheeses. If you prefer, you can just use more provolone or any other cheese that melts well.     I used chicken breasts in this recipe, because they cook up so fast. Definitely a plus on busy evenings! You can also make it with boneless chicken thighs if you prefer. If your chicken breasts are on the larger side, cut them in half horizontally to make thinner fillets. Mine were on the smaller side so I just hit them a bit with a kitchen mallet to even them out. Iโ€™ve dredged these breasts in flour before cooking. Itโ€™s totally optional, but I like the crispy coating it gives to the chicken and how it keeps the breasts juicy. Plus the sauce just clings to every nook and cranny!

    Making these Honey Sriracha Chicken Breasts is so easy.

    • Salt and pepper the chicken, then dredge in flour.
    • Cook the chicken until golden brown on both sides.
    • Push the chicken to one side of the pan and put in the butter and garlic.
    • Cook the garlic for a half a minute then add the sauce ingredients. Let it simmer for a minute to get bubbly and syrupy, coating the chicken breasts. And done! How easy was that?!

    • 1 ยฝ tablespoons soy sauce (27g)
    • 1 tablespoon freshly squeezed lime juice (16g)

    For the chicken:

    • 1 lb. chicken breasts (500g)
    • ยผ cup all-purpose flour (35g)
    • 2 tablespoons vegetable oil
    • 1 tablespoon butter (28g)
    • 5 cloves garlic finely minced

    Garnish:

    • sliced green onion
    • sesame seeds

    Instructions
     

    For the sauce:

    • Combine the sauce ingredients in a bowl. Set aside.

    For the chicken:

    • If your chicken breasts are on the larger side, cut them in half horizontally to make thinner fillets. If they are on the smaller side, hit them a bit with a kitchen mallet to even them out.
    • Salt and pepper chicken breasts to taste. Dredge in flour.
    • Heat 2 tablespoons vegetable oil in a pan over high heat. Sautรฉ chicken breasts until golden brown on each side and cooked through.
    • Either remove chicken from pan or push to one side.
    • Add butter and garlic to pan and cook for 30 seconds, stirring. Add the rest of the sauce ingredients. Let simmer for about 1 minute or until desired thickness.
    • Turn off heat. Return chicken to pan (or spread out if pushed to one side) and coat with sauce.
    • Sprinkle with sliced green onions and sesame seeds. Serve.

    Notes

    • These Honey Sriracha Chicken Breasts are perfect served with rice and a steamed veggie like broccoli. I made sure there was enough sauce to drizzle over the rice.

    Which acid to use and in which proportions

    I love artichoke hearts marinated in fresh lemon juice. Vinegar is also commonly used. If you find straight vinegar a little too strong for you, you can dilute it with a little water.

    Make the marinade in the same ratio that you like a salad dressing. For me thatโ€™s about 2 to 1, olive oil to lemon. For one can of artichoke hearts, I use ยฝ cup olive oil and ยผ cup lemon. Taste the marinade and adjust accordingly.

    Depending on the jar you use and how tightly you pack the artichokes, you may need to add a little more oil and lemon so that they are covered. This is especially important if you will be keeping the artichokes in the fridge for a while. If you plan on using them right away, itโ€™s not so important that they are completely covered.

    How to make Marinated Artichoke Hearts

    Open up a can of artichoke hearts in water. Drain and rinse them. Cut the hearts into quarters (if they are not already) and place them in a jar.

     Sprinkle on top sliced garlic, dried Italian herbs, peppercorns, and salt. If you have more than one layer of artichokes in the jar, you can sprinkle in some of the garlic and herbs between layers.

    Pour on top lemon (or vinegar) and olive oil to cover. Put on the lid and shake gently to coat all the artichokes and evenly disperse the dressing.

    They can be eaten right away, but will be even better if you let them rest for an hour or even overnight. The Marinated Artichoke Hearts can be kept in the refrigerator, covered with oil, for up to 3 weeks. I push the artichokes down a little bit so they are all covered.

    Perfect for meal prep

    This Antipasto Pasta Salad is perfect for meal prep. Iโ€™m a little leery of a lot of meal prep ideas. Some foods can get kind of funky sitting for a few days in the fridge. Antipasto is a different story. Antipasto ingredients have a longer shelf life and even improve on sitting. I love making a batch of this on Sunday to enjoy for lunch during the week. (I actually really love it for breakfast.) The only change I might make for the salad to last longer is to not cut the tomatoes in half so they stay fresher.

    How to make Italian Antipasto Pasta Salad

    Iโ€™ve used my favorite Antipasto here, but you can whatever you love and whatever you have on hand. Some ideas are:

    Marinated artichokes โ€“ This must be my favorite thing on the antipasto tray. You can buy a jar of marinated artichokes (the easiest way), pick some up from the deli, or try my Easy Marinated Artichokes (the most delicious way). My Easy Marinated Artichokes take minutes to make from canned artichokes. Theyโ€™re much cheaper than jarred artichokes and way much more delicious.

    Roasted Red Peppers โ€“ Roasted red peppers add one of the most important, complex flavors to the Antipasto Pasta Salad and a burst of color. You can find them jarred, pick some up in the deli, or make your own. If you donโ€™t have roasted red peppers, you can chop up a fresh red bell pepper and add it.

    Olives โ€“ Olives are another one of the important flavors of this pasta salad. I donโ€™t actually like olives. Iโ€™d never eat one by itself. But the flavor they give to the pasta salad as the flavors combine and mix together is wonderful.

    Cherry tomatoes โ€“ Cherry tomatoes give this Antipasto Pasta Salad a beautiful pop of color and a juicy, fresh deliciousness.

    Pepperoncini - Tangy and zesty pepperoncini add color and zing. You can either slice them or leave them whole.

    Cheese โ€“ I always use finely grated parmesan cheese in this Antipasto Pasta Salad. Itโ€™s rich, umami flavor is indispensable. Other additions are creamy, little fresh mozzarella balls or diced provolone.

    Salami โ€“ I didnโ€™t add any salami to this pasta salad to keep things vegetarian, but adding some chopped salami would add a delicious salty, smoky flavor.

    Parsley โ€“ A big handful of chopped fresh parsley adds a fresh flavor and vibrant color.

    Other ideas for add-ins: red onion, pepperoni, basil, a spoon of pesto, sundried tomato, chopped fennel, diced cheeses, Italian meats, or any kind of grilled, roasted, or marinated veggies.

    • 10 ounces 280g cherry tomatoes halved (about 2 cups)
    • 3.5 ounces 99g chopped olives black, green, or mixed (about ยพ cup)
    • 2 ounces 57g finely grated parmesan ยฝ cup
    • 1 bunch fresh parsley chopped (about 1oz, 28g)
    • 8 ounces 227g fresh mozzarella balls cut in half
    • Pepperoncini to taste, sliced or whole
    • 1 small red onion chopped or sliced thin

    For the dressing:

    • ยฝ cup olive oil
    • ยผ cup red wine vinegar or lemon juice
    • 1 clove garlic finely minced (or ยผ teaspoon garlic powder)
    • 1 tablespoon finely grated parmesan cheese
    • 1 teaspoon dried Italian herbs or dried oregano
    • ยฝ teaspoon chili flakes or to taste
    • 1 teaspoon sugar or to taste
    • ยฝ teaspoon salt or to taste
    • ยฝ teaspoon black pepper or to taste

    Instructions
     

    • Cook the pasta according to the package directions. Drain and rinse under cold water. Drain.
    • Combine all of the dressing ingredients in a jar and shake to combine. Adjust salt and sugar to taste.
    • Toss pasta with the rest of salad ingredients and dressing.
    • Cover and refrigerate.
    • Serve cold or at room temperature.

    Notes

    • Feel free to swap out any ingredients that aren't your favorite!

    How to make Orange Olive Oil Cake

    The key to the moist, light crumb of this Orange Olive Oil Cake is whisking air into the eggs. The eggs are whipped with a whisk attachment in a stand mixer for a minute. Sugar and orange zest are added and then whipped on high speed for another three minutes.

    With the machine running, olive oil is slowly poured in and whipped another minute. The dry ingredients and orange juice are mixed in alternately until combined.

    The batter is poured into a 9-inch (or 10-inch) springform pan and sugar is sprinkled on top. As it bakes, the cake will puff up, cracking the crust, and leaving a crispy, crackly topping.

    This recipe is adapted from Cook's Illustrated's Olive Oil Cake. I swapped orange juice for the milk and 1 tablespoon orange zest for ยผ teaspoon lemon zest.

    Ingredients
      

    • 1 ยพ cups all-purpose flour (8.75oz, 248g)
    • 1 teaspoon baking powder
    • ยพ teaspoon salt
    • 3 large eggs
    • 1 ยผ cups sugar (8.75oz, 248g)
    • Finely grated orange zest from 2 oranges (1 tablespoon, 6g)
    • ยพ cup extra-virgin olive oil (5.25oz, 149g)
    • ยพ cup orange juice (6.9oz, 197g)

    For topping:

    • 2 tablespoons sugar (.9oz, 25g)

    Instructions
     

    • Preheat oven to 350 degrees F. Spray a 9-inch springform pan with nonstick baking spray.
    • Put flour, baking powder, and salt in bowl and whisk to combine.
    • Using stand mixer fitted with whisk attachment, whip eggs on medium speed until foamy, about 1 minute.
    • Add sugar and orange zest. Whip on high speed until mixture is fluffy and pale yellow, about 3 minutes.
    • Reduce speed to medium. With mixer running, slowly pour in oil and mix until oil is fully incorporated, about 1 minute.
    • Add half of flour mixture and mix on low speed until incorporated, about 1 minute, scraping down bowl as needed.
    • Add orange juice and mix until combined, about 30 seconds. Add remaining flour mixture and mix until just incorporated, about 1 minute, scraping down bowl as needed.
    • Pour batter into prepared pan. Sprinkle 2 tablespoons sugar over entire surface.
    • Bake until cake is deep golden brown and a toothpick inserted in the center comes out with a few crumbs, 40 to 45 minutes.
    • Let cake cool on a rack for 15 minutes. Remove side of pan and let cake cool completely, about 1 ยฝ hours.

    Notes

    • I also like to make this Orange Olive Oil Cake in a 10-inch springform pan. Increase the sugar to 2 ยฝ tablespoons sugar. The cooking time may decrease slightly.

    The flavor of the Italian sausage permeates the sauce after a short 10 minute simmer. The sauce is so creamy and has just the right amount of garlic and just the right amount of parmesan. Everything perfectly balanced. Baby spinach adds color and sneaks in some veggies. You have to try it to believe how good it is. This is one of those cases when the whole is definitely greater than the sum of its parts.

    A little onion and garlic are sautรฉed in olive oil until softened. Then Italian sausage is added โ€“ with the casings removed. If your sausage doesnโ€™t have fennel in it, add a half teaspoon of crushed fennel seeds - the fennel is what really gives it amazing flavor.

    When the sausage is brown, deglaze the pan with chicken broth. Add cream, bay leaf, and Italian seasoning and let it come to a simmer. Simmer for about 10 minutes. Turn off the heat and slowly add the parmesan cheese while whisking or stirring it in. Turning off the heat first is important. If you add the parmesan to a bubbling sauce and it gets too hot, too fast, it may seize and clump up โ€“ completely ruining the dish. Youโ€™ll end up with big clumps of cheese and spinach all stuck together. (I ate those clumps so you wouldnโ€™t have to. ๐Ÿ™‚ )

    Ingredients
      

    For the Pasta

    • 1 lb pasta โ€“ I used penne (454g)
    • 1 tablespoon butter (.5oz, 14g)

    For the Sauce:

    • 3 tablespoons extra-virgin olive oil (1.5oz, 42g)
    • 1 small onion chopped fine
    • 4 cloves garlic chopped fine or put through the garlic press
    • 1 lb sweet Italian sausage (454g **see note**)
    • 1 teaspoon Italian seasoning or a mix of dried basil, thyme, marjoram, and oregano
    • 1 bay leaf
    • ยพ cup chicken broth (6.2oz, 176g)
    • 1ยฝ cups heavy cream (12.6oz, 357g)
    • ยพ cup freshly grated Parmesan cheese (3oz, 85g)
    • 8 ounces baby spinach (227g)
    • salt and pepper to taste

    Instructions
     

    For the Pasta:

    • Bring a large pan of salted water to a boil. Add the pasta and cook until al dente. Drain and toss with butter.

    For the Sauce:

    • Heat the oil in a skillet over medium heat and sautรฉ the onion and garlic until it is soft and translucent.
    • Remove the sausage from casings and add to the pan. Cook until browned.
    • Deglaze pan with chicken broth.
    • Add Italian seasoning, bay leaf, and heavy cream. Let simmer on low for 10 minutes.
    • Off the heat, slowly stir in parmesan cheese and whisk or stir until melted.
    • Stir in baby spinach. Salt and pepper to taste.
    • Toss with hot buttered pasta and serve immediately.

    Notes

    • ย **If your sausage doesn't contain fennel seed, toast ยฝ teaspoon fennel seeds in a pan until they become aromatic, then pound in a mortar and pestle and add to sausage.

    Use very ripe, heavily speckled bananas

    Heavily speckled or even mostly brown bananas make the most moist and flavorful Chocolate Chip Banana Bread. As bananas ripen their starch turns to sugar, becoming sweeter and more flavorful. Iโ€™ve settled on one and a half cups of mashed bananas (about 3 medium) for a light fluffy loaf full of banana flavor. Any more than that makes a dense, almost wet, bread that doesnโ€™t rise as well.

    Mash the bananas with a fork, donโ€™t puree them

    The bananas should be so soft that theyโ€™re easy to smash with a fork. Smashing with a fork gives the bananas the perfect consistency. When you bite into the banana bread, those tiny chunks will be big bursts of banana flavor. You want to smash the bananas well, though, so there arenโ€™t big chunks of banana in the bread.

    Using a food processor or pureeing the bananas makes the batter too thin which affects the leavening agentโ€™s ability to rise the banana bread. The batter must be thick enough to trap gases produced by the leaveners.

    Which is better: butter or oil?

    Iโ€™m guessing this is the most controversial question I had about banana bread. There seems to be strong opinions in both camps. I found that I preferred melted, cooled butter. Butter made the bread moist, and it also added a rich, buttery, nutty flavor. Using melted butter allows the batter to be gently folded together for the most tender crumb. Melted butter instead of softened butter also means you can stir it up by hand which makes it easier โ€“ a plus. The banana bread made by creaming softened butter turned out more dense. Oil made the banana bread a little too moist. It was heavier and wetter, almost greasy.

    Brown sugar or white sugar?

    I think that both have their good sides. Brown sugar adds a caramelized flavor to the bread. It also makes a browner bread, something I struggled with until I used light colored pans. (See below). Iโ€™ve stuck with white sugar, though. I donโ€™t want anything to distract from the banana flavor (besides all that chocolate!)

    Baking soda or baking powder?

    This is one of the questions that made me test the most cakes. Recipes online are pretty much split, with half using powder and half using soda.

    Baking powder and baking soda both produce carbon dioxide, which helps raise the banana bread. However they do not work the same, and theyโ€™re not easily interchangeable in recipes.

    Baking soda is a base and needs acid in the recipe to react and raise the bread. In the case of banana bread, this may be yogurt, buttermilk, brown sugar, molasses, or the bananas themselves. Recipes generally include just enough baking soda to balance the acidity in the batter, after that it can give a bitter, metallic taste. If the recipe doesnโ€™t have enough acid for the baking soda to react, it wonโ€™t rise properly.

    Baking powder contains both baking soda and cream of tartar, a dry acidic ingredient. It doesnโ€™t need acid in the batter to raise the bread.

    Sometimes both baking soda and baking powder are called for in recipes that contain some kind of acid, but baking soda isnโ€™t enough to give it the necessary lift. Baking powder is added to give it extra volume.

    Baking soda and baking powder both expire so be sure yours is fresh for the best rise.

    Added dairy or no added dairy?

    This was the second big question I had, and it goes hand in hand with what kind of leavener is used. Adding dairy, such as yogurt, Greek yogurt, sour cream, or buttermilk, to Chocolate Chip Banana Bread can add moisture. It can also make the bread heavier.

    When I thought that I had settled on a recipe for my Chocolate Chip Banana Bread, I came across a recipe in Baking Illustrated written by Cookโ€™s Illustrated. (You may wonder why I didnโ€™t just start there. I asked myself the same thing.)

    Cookโ€™s Illustrated tested different kinds of dairy in their banana bread: milk, buttermilk, sour cream, and yogurt. Sour cream added richness, but gave the bread a heavy texture and unattractive, pebbly crust. Milk didnโ€™t add any flavor, but gave a slick crust. Buttermilk gave the bread a nice tang, but plain yogurt let the banana flavor stand out and made a more solid loaf.

    Cinnamon, nutmeg, and cloves bring out the banana flavor.

    The aroma profile of bananas contains 49 components. One of these components is eugenol. The chemical compound eugenol found in bananas smells spicy, like cinnamon. Eugenol is also found in cinnamon, nutmeg, and cloves.  Adding cinnamon, nutmeg, and cloves deepens the banana flavor of the loaf. Just a bit though, you donโ€™t want to overpower the banana flavor. Weโ€™re also aiming for Chocolate Chip Banana Bread bread here, not spice bread.

    What is the best mixing method?

    Creaming softened butter and sugar together creates a soft, cake-like texture, however it also gives the bread a lighter color, not the beautiful golden brown color we associate with a delicious Chocolate Chip Banana Bread

    The quick bread method is where the dry ingredients are mixed in one bowl and the liquids are mixed in another. The two are then gently combined. This method created delicate texture. It also gave a heartier crumb, and it rose higher.

    The quick bread method is the method I preferred. Be sure to use a light hand when combining the dry and liquid ingredients. Stirring them into a smooth batter produces loaves that are small and tough. The more you stir, the more the gluten develops, preventing the bread from rising well. Gently fold the wet and dry ingredients together, just until the dry ingredients are moistened. The batter should be thick and chunky, but without any streaks of unincorporated flour.

    Use a light-colored baking pan

    Because the bread bakes so long and because of the sugar content, I had a really hard time baking this Chocolate Chip Banana Bread in a darker colored baking pan. Dark pans get hotter around the sides and bottom. The bread would turn too dark before the insides were fully cooked. I found a light-colored baking pan that I liked, and the problem was solved.

    Some tips if you only have a darker colored pan:

    Cook the bread for 50 minutes at 350 F then lower the oven to 325 F until itโ€™s finished.

    Line the pan with parchment.

    Try Bake-Even strips to insulate the sides.

    Use a non-stick baking pan, and butter and flour only the bottom.

    This was a nifty trick I learned from Cookโ€™s Illustrated. By buttering and flouring (or using non-stick baking spray) only the bottom, the bread can cling a little better to the sides of the pan as it rises, producing a lighter, higher loaf. If the loaf doesn't easily come out, just run a knife in between the pan and the loaf.

    If your pan isnโ€™t, non-stick, butter and flour the sides as well.

    The final recipeโ€ฆ.

    After testing more than 20 recipes, some more than once and often two at a time to have a side by side comparison, I narrowed my search down to two recipes. Both are fabulous. One is adapted from Baking by Flavor, by Lisa Yockelson, the other is adapted from Baking Illustrated by Cookโ€™s Illustrated.

    These two recipes are surprisingly similar. The Yockelson recipe uses butter, white sugar, and baking powder. Itโ€™s a lovely, simple recipe, full of banana flavor, moist, with a light crumb.

    The Cookโ€™s Illustrated recipe swaps out two tablespoons of butter and replaces it with plain yogurt. It also uses baking soda instead of baking powder. From what we learned about baking soda and baking powder, this makes perfect sense. Because yogurt is an acid, along with the bananas, baking soda can be used. This loaf was every bit as lovely as the Yockelson loaf. Baked side by side, I slightly preferred the Chocolate Chip Banana Bread made with the yogurt and baking soda. The taste was identical, however the baking soda bread rose slightly higher, giving a fluffier crumb.

    Iโ€™ve given a range of 6 to 8 ounces of chocolate chips to be used in the batter. This is up to personal preference and how much chocolate you want in your Chocolate Chip Banana Bread. The idea is to find the perfect balance between the banana and the chocolate. You donโ€™t want the chocolate to overpower the banana. The Chocolate Chip Banana Bread in the photos have 8 ounces of chocolate chips in the batter and another 2 ounces sprinkled on top.

    If you notice in the photos, there are two different loaves. On one loaf, the chocolate chips are just sprinkled on top. On the other, I used a rubber spatula to gently smooth over the chocolate chips so they would sink into the batter a little bit.

    * Add ยพ cup walnuts or pecans.

    *Replace chocolate chips with fresh, frozen, or dried berries. 

    I will give the recipe for the Chocolate Chip Banana Bread with yogurt, and give the alterations for the bread without yogurt in the notes. You may or may not have yogurt in the house when the craving for banana bread strikes, but that wonโ€™t stop you from enjoying a warm slice of the perfect Chocolate Chip Banana Bread in a little over an hour.

    Ingredients
      

    • 2 cups unbleached all-purpose flour (10oz, 283g)
    • ยพ teaspoon baking soda
    • ยฝ teaspoon baking powder
    • ยฝ teaspoon salt
    • 1 teaspoon cinnamon
    • โ…› teaspoon ground nutmeg
    • โ…› teaspoon ground cloves
    • 2 large eggs beaten lightly
    • ยพ cup granulated sugar (5.25oz, 149g)
    • 1 ยฝ cups very ripe bananas soft, darkly speckled, mashed well (13.65oz, 387g (about 3 medium))
    • ยผ cup plain yogurt (2oz, 57g)
    • 6 tablespoons unsalted butter melted and cooled (3oz, 85g)
    • 1 teaspoon vanilla
    • 6 - 8 ounces milk chocolate or semisweet chocolate chips (170-228g)
    • 1 - 2 ounces chocolate chips for sprinkling on top optional (28-57g)

    Instructions
     

    • Preheat oven to 350F. Place rack in middle of oven.
    • Prepare a 9 by 5 inch loaf pan by buttering and flouring the base only if it is nonstick. Butter also the sides if it is not nonstick. Nonstick baking spray can be used instead of butter and flour.
    • In a small mixing bowl, combine the flour, soda, baking powder, salt, cinnamon, nutmeg, and cloves. Whisk to combine. Reserve ยฝ tablespoon flour and mix with 6-8 ounces chocolate chips.
    • In a large mixing bowl, whisk together eggs and sugar. Add mashed bananas, yogurt, melted butter, and vanilla. Whisk until thoroughly combined.
    • Gently fold the wet and dry ingredients together, just until the dry ingredients are moistened. The batter should be thick and chunky, but without any streaks of unincorporated flour.
    • Gently fold in the chocolate chips that have been tossed with flour.
    • Pour batter into prepared loaf pan and smooth. Sprinkle on additional chocolate chips if desired.
    • Bake until golden brown and a toothpick inserted into the center of the cake comes out clean, about 55 minutes.
    • Remove from oven and cool on a rack for 5 minutes. Remove loaf from pan and let cool on rack. (If you didn't butter and flour the sides of the pan, you may need to run a sharp knife in between the sides pan and the loaf.)
    • Serve warm or at room temperature.

    Notes

    For a no-yogurt Banana Bread:
    • Replace yogurt with 2 additional tablespoons of butter, bringing the butter to 8 tablespoons (4oz, 113g).
    • Replace baking soda with 1 teaspoon baking powder.
    Chocolate Chip Banana Bread freezes very well. After cooling completely, either wrap the whole loaf or individual slices tightly in plastic wrap. Let the whole loaf thaw to room temperature. Individual slices can be microwaved for about 30 seconds directly from the freezer.
