    Why Put Zucchini in Chocolate Cake

    Zucchini makes cakes and baked goods incredibly moist. It adds tons of moisture without adding any flavor. If you shred it fine enough, you wonโ€™t even see it in the baked cake. (My kids wonโ€™t eat cake if they see green in it!)

    The most incredible frosting for Chocolate Zucchini Cake is this velvety smooth Chocolate Cream Cheese Frosting. Itโ€™s light and fluffy with the perfect hint of tanginess.

    Ingredients

    Flour: All-purpose flour is used in this cake. Cake flour would not be sturdy enough to hold this quantity of zucchini.

    Unsweetened Natural Cocoa Powder: This cake is made with natural cocoa powder, not Dutch processed. Natural cocoa is acidic and reacts with the baking soda to allow the cake to rise. Sift the cocoa powder to remove any lumps.

    Baking Soda and Baking Powder: This recipe uses both baking soda and baking powder for lift.

    Salt: Salt brings out the flavors and sweetness in baked goods. Without it, they would taste flat.

    Butter and Oil: This recipe uses both butter and oil โ€“ butter for flavor and oil for moistness.

    Sugar: White granulated sugar is used for simplicity of flavor.

    Eggs: Use room temperature eggs so they incorporate properly.

    Buttermilk: Adds moisture and acidity to react with the baking soda.

    Vanilla: For flavor.

    Zucchini: I finely shred the zucchini so that it disappears inside the baked cake. There's no need to peel it first.

    When zucchini is finely shredded it releases a lot of moisture. I set it in a strainer to get rid of the excess liquid and lightly press it if necessary. You donโ€™t want to squeeze all the moisture out though. If you shred the zucchini on the larger holes of a box grater, thereโ€™s no need to drain it.

    Optional: Chocolate Chips โ€“ for extra chocolate flavor.

    How to make

    • Whisk together the dry ingredients
    • Using a stand mixer or hand mixer, mix together the butter, oil, and sugar until combined. Add the eggs, one by one, mixing for 20 seconds after each addition.
    • Mix in the buttermilk and vanilla until thoroughly combined.
    • On low speed, mix in the dry ingredients until combined.
    • Stir in the grated zucchini with a wooden spoon or spatula.

    • Pour into prepared pan and bake until a toothpick inserted into the center comes out clean, about 30 minutes.

    • Add the vanilla, cocoa, confectionersโ€™ sugar, and pinch of salt. Beat until light and fluffy.

    With Chocolate Chips

    For an extra chocolatey cake, add 1 cup of semi-sweet chocolate chips to the batter.

    Chocolate Orange Zucchini Cake Recipe

    For a delicious flavor variation, add 1 tablespoon of finely grated orange zest to the cake batter.

    How to store

    Store cake in a covered container in the refrigerator for up to 5 days.

    How to freeze

    Whole frosted cake or individually wrapped slices can be frozen for up to 2 months. Wrap well with plastic wrap then put inside a freezer bag.

    Thaw whole cake in refrigerator overnight, then on the counter until room temperature, if desired.

    Individual slices can be thawed on the counter.

    • 2 cups all-purpose flour 283g
    • ยพ cup unsweetened natural cocoa powder 75g
    • 1 teaspoon baking soda
    • ยฝ teaspoon baking powder
    • ยพ teaspoon salt
    • ยฝ cup unsalted butter, melted and cooled 113g
    • ยฝ cup vegetable oil 112g
    • 1 ยพ cups granulated sugar 347g
    • 3 large eggs
    • ยฝ cup buttermilk 113g
    • 2 teaspoons vanilla
    • 2 ยฝ cups finely shredded zucchini 330g

    For the Chocolate Cream Cheese Frosting:

    • ยฝ cup unsalted butter, at a cool room temperature 113g
    • 8 oz cream cheese, at a cool room temperature 226g
    • 3 cups powdered sugar 375g
    • 6 tablespoons unsweetened natural cocoa powder 36g
    • 1 teaspoon vanilla

    Instructions
     

    • Preheat the oven to 350ยฐF. Spray a 9 by 13-inch baking pan with nonstick cooking spray.

    For the Chocolate Zucchini Cake:

    • In a medium bowl, whisk together the dry ingredients: the flour, cocoa, baking soda, baking powder, and salt.
    • In the bowl of a stand mixer or in a large mixing bowl with a hand mixer, mix together the butter, oil, and sugar until combined, about 1 minute.

    What is orzo?

    Orzo is a small rice-shaped pasta made of durum wheat semolina flour. Orzo is Italian for "barley" due to its resemblance to the grain. This small pasta is categorized as "pastina," which means "little pasta." In traditional Italian cooking, orzo is used in soups and broths, but it's also great as a side dish and in pasta salads.

    Quick and easy to make Greek Orzo Salad is loaded with fresh crunchy veggies and all of your favorite Mediterranean flavors. This healthy pasta salad recipe is perfect for picnics, potlucks, or barbeques or as an easy, flavorful side dish for dinner.

    Ingredients

    • Orzo
    • Veggies in an authentic Greek Salad โ€“ tomato, cucumber, bell pepper, and red onion. Green bell pepper is traditional, but I like to use red and green for color and flavor. I use the mini cucumbers, but you can also use an English cucumber or a regular cucumber.
    • Fresh herbs โ€“ use a mix of what you like and have on hand. Iโ€™ve used parsley and mint here. You could also use basil and/or dill.
    • Kalamata olives
    • Feta cheese
    • Lemon herb vinaigrette โ€“ a simple vinaigrette made with red wine vinegar, lemon, olive oil, dried oregano, and salt. I like to add a clove of garlic as well.

    How to make

    Cook the orzo: Boil the orzo just like pasta. Bring a large pot of salted water to a boil over high heat. Add the orzo, and cook, stirring occasionally, for 7-8 minutes, or until al dente. Drain and rinse under cold water until cooled. Drain again and put into a large mixing bowl.

    Chop the veggies and herbs: I like to chop the veggies small to be more similar to the size of the orzo, but chunky is fine too. Soak the chopped onion in cool water for about 10 minutes to remove the strong flavor.

    Make the vinaigrette dressing: Combine the dressing ingredients in a jar and shake to combine.

    Mix all the ingredients: Toss the orzo, the veggies and herbs, the dressing, and the crumbled feta together.

    Chill: Refrigerate for an hour or two to chill the salad and infuse the flavors.

    • 16 oz orzo 454g
    • 10 oz cherry tomatoes chopped (about 1 ยฝ cups)
    • 3 mini cucumbers chopped (about 1 ยฝ cups)
    • ยฝ red onion chopped, soaked in water for 10 minutes, then drained
    • 1 large bell pepper chopped (red, green, or half of each)
    • ยฝ cup chopped fresh parsley and mint *see note
    • 1 cup Kalamata olives chopped (about 4.7oz)
    • 4 oz feta cheese crumbled

    For the lemon vinaigrette:

    • 2 tablespoons lemon juice
    • 2 tablespoons red wine vinegar
    • ยฝ cup extra virgin olive oil
    • ยฝ teaspoon dried oregano
    • Salt to taste
    • 1 - 2 cloves garlic finely minced, optional

    Instructions

    Fruit crisps are one of my all-time favorite desserts. Who can resist that bubbling, juicy, syrupy fruit topped with the MOST AMAZING crumble topping?

     Iโ€™ve tried countless recipes and proportions to get the perfect crisp topping and THIS IS IT!

    The perfect crisp topping should be crunchy and crispy. It should hold together in yummy, chunky clusters and should never ever be powdery and dry.

    The fruit should be lightly sweetened โ€“ just enough so that it isnโ€™t sour, but still keeping a bright and tart flavor that perfectly complements the sweet crumble topping.

    The fruit should be perfectly thickened. It should be a syrupy sauce that clings to the berries. Not so thin that itโ€™s watery and not so thick that it gets gummy.

    Crisps and crumbles are both dishes of baked fruit with a streusel crumb topping. Traditionally, while a crumb topping would be made of butter, flour, and sugar, a crisp topping would also include oats and/or nuts. The oats will crisp up during baking, while crumble toppings stay more dense and cakey.

    As time has gone by, the lines have blurred and the names crumble and crisp are now often used interchangeably.

    What kind of oats for fruit crisp dessert

    I use old-fashioned rolled oats for the crumble topping. It makes a chunkier, chewier, crispier streusel topping.

    • Blueberries โ€“ Iโ€™ve used fresh, but you can also use frozen. No need to thaw first. Iโ€™ve made the proportions for this recipe with a 24 ounce container which is the size I find at my local grocer.
    • Sugar โ€“ to lightly sweeten.
    • Flour โ€“ to thicken.
    • Cinnamon โ€“ just a touch for a cozy flavor.
    • Lemon juice and zest โ€“ adds a bright flavor. The zest is optional but lemon and blueberries are ❤❤❤.
    • Salt โ€“ just a pinch brings out the sweet flavor.

    For the crumble topping:

    • Brown sugar โ€“ for that sweet, caramely flavor
    • All-purpose flour โ€“ to form the crumbles
    • Old-fashioned rolled oats โ€“ crunchy and chewy crumbles
    • Softened butter โ€“ to hold it all together in crunchy chunks
    • Cinnamon
    • Salt

    Prepare the berries

    Toss the berries with the flour, sugar, cinnamon, salt, lemon juice, and lemon zest. Put in a baking dish.

    Make the crumble topping

    I get the best results by mixing the crumble topping by hand. Use softened but still cool butter. Combine all of the topping ingredients in a bowl and press the mixture together between your fingers until it is mixed and forming clusters.

     If you have any problem forming the clusters, just stick it in the fridge for a few minutes to firm up.

    Bake Blueberry Crumble until the berries are bubbly, and the topping is golden brown, about 35-40 minutes. If the topping browns too quickly before the berries are done, cover with a piece of tented foil.

    I used an 8 by 12-inch oval baking dish. You can also use:

    • 8 by 8-inch pan
    • 9 by 9-inch pan
    • Pie dish
    • 7 by 11-inch pan
    • Any baking dish that holds about 2 quarts (8 cups)
    • 6 ramekins (8oz each) for individual servings

    Itโ€™s a good idea to put a baking sheet under your dish when baking to catch any drips, especially if your filling comes up to the top of the dish.

    How to make with frozen blueberries

    You can make Blueberry Crumble with frozen blueberries. Prepare the filling as directed. You may need to add additional baking time. Itโ€™s done when the filling is hot, bubbly, and starting to thicken. (It will thicken further as it cools.)

    How to freeze

    An unbaked blueberry crisp can be covered and frozen for up to 1 month. Transfer to the refrigerator 1 day before baking.

    A baked crisp can be cooled and then frozen for up to 1 month. Reheat in a 350 F oven until hot.

    How to store

    Cool the crisp to room temperature then refrigerate for up to 3 days. Warm individual portions in the microwave.

    Ingredients
      

    For the blueberry filling:

    • 24 oz blueberries (680g, about 5 cups)
    • โ…“ cup granulated sugar 66g
    • 3 ยฝ tablespoons all-purpose flour 31g
    • ยผ teaspoon cinnamon
    • โ…› teaspoon salt
    • 2 teaspoons lemon juice 10 ml
    • finely grated zest from 1 lemon optional

    For the crumble topping:

    • ยฝ cup butter softened 113g
    • ยพ cup firmly packed brown sugar 149g
    • โ…” cup all-purpose flour 94g
    • ยพ cup old-fashioned rolled oats 74g
    • ยผ teaspoon salt
    • ยฝ teaspoon cinnamon

    Instructions
     

    • Preheat the oven to 375ยฐF.
    • Toss the blueberries, with sugar, flour, cinnamon, salt, lemon juice, and zest. Place in a 2 quart baking dish.
    • Combine the butter, brown sugar, oats, flour, cinnamon, and salt and press with your fingers until thoroughly combined and clusters form. Sprinkle over blueberries.
    • Bake on the middle rack for 35-40 minutes or until the fruit is bubbly the top is golden brown. Cover top with a tent of foil if the topping browns too quickly.
    • Cool for about 10 minutes then serve warm.

    โ€œWetโ€ wings are wings that arenโ€™t just fried or baked, then sprinkled with Lemon Pepper seasoning. Wet Lemon Pepper Wings mean theyโ€™re tossed in a lemon pepper sauce giving every bite a potent, zesty kick.

    For crackly, crispy chicken wings I use my Super Crispy Baked Chicken Wings recipe. Check out my post where I tested four different methods to get the crunchiest, crispiest wings that are tender and juicy on the inside.

    The secret to making oven baked chicken wings extra crispy?

    Baking powder. Coating the wings with baking powder helps draw moisture to the surface of the skin which is evaporated in the high heat of the oven. It also creates little bubbles on the skin, which harden and create the crispy texture.

    How to make super crispy oven baked chicken wings in three easy steps:

    • Dry the wings thoroughly with paper towels.
    • Toss the wings with baking powder and salt.
    • Bake at 250F for 30 minutes, then at 425F for about 40 โ€“ 50 minutes until golden brown and crispy.

    These easy Baked Chicken Wings are amazingly crispy and crunchy.     This method, from Cookโ€™s Illustrated, produces a super crispy wing with minimal effort, the fewest steps, and the least amount of cleanup. If you line your baking pan with aluminum foil, the only thing that needs to be washed is the baking rack.

    1. Dry the wings thoroughly with paper towels. You want to remove as much excess moisture from the skin as possible so they crisp up in the oven. If you have time, space, and have planned in advance, you can let them further dry out in the fridge for up to 24 hours (after tossing them with baking powder and arranging them on a rack).
    2. Toss the wings with baking powder. This draws moisture to the surface so it can evaporate in the high heat of the oven, creating a crispy surface. It also creates tiny bubbles on the surface, increasing the surface area and the crackly, crunch.
    3. Bake at a lower heat first to render out the fat, then finish the wings on high heat. The wings are first baked low and slow at 250F for 30 minutes on the lower shelf of the oven to melt out the fat. Then the heat is cranked up to 425F for 40 โ€“ 50 minutes so the skin gets super crispy. Theyโ€™re baked on a baking rack that has been set on an aluminum foil lined baking sheet so the hot air can circulate all around them, crisping all sides

    How to make Lemon Pepper Sauce for Chicken Wings

    For BIG Lemon Pepper Wet flavor, this sauce is made of:

    • Butter โ€“ for the wet, saucy part
    • Lemon Pepper Seasoning โ€“ for the zesty kick
    • Lemon juice โ€“ for BIG lemon flavor
    • And a touch of honey โ€“it balances the acidity and adds a touch of stickiness that I love in wings

    Toss the baked wings in the sauce or brush it on.

    Lemon Pepper Seasoning

    Make your own Homemade Lemon Pepper Seasoning or pick up a bottle at the supermarket.

    Check out my post on Homemade Lemon Pepper Seasoning. Itโ€™s easy and cheap (especially if you were just going to throw away the peels!).

    While my basic Homemade Lemon Pepper Seasoning has just dried lemon zest, pepper, and (sometimes) salt, I like to add a little onion and garlic powder in for these wings (and a little celery salt if you have some on hand).

    Lemon Pepper Dry Rub Wings

    To make Lemon Pepper Dry Rub Wings, rub half the lemon pepper seasoning into the wings with the baking powder before baking, and sprinkle the other half of the seasoning on the wings when theyโ€™re done. Omit the butter, lemon juice, and honey.

    How to make in advance

    This Lemon Pepper Wing recipe is perfect for making in advance.

    • Clean and dry the wings, toss them with baking powder and salt, and place them on a baking rack.
    • Keep them in the refrigerator for up to 24 hours, uncovered. This will help them dry out even further, becoming even more crispy.
    • When youโ€™re ready to bake, pop them into the oven and proceed with the recipe.
    • The Lemon Pepper sauce for wings can also be made in advance and reheated before tossing with or brushing on wings.

    What to serve with Lemon Pepper Wings

    Lemon Pepper Wings make the perfect game day or party appetizer. Serve with extra Lemon Pepper Butter Sauce, Blue Cheese dressing, or Ranch dressing on the side.

    • 2 lb chicken wings, cut into wingettes and drumettes 900g
    • 1 tablespoon aluminum free baking POWDER 21g
    • ยฝ teaspoon salt
    • Nonstick cooking spray

    For the Lemon Pepper Butter Sauce:

    • 4 tablespoons melted butter
    • 1 tablespoon Lemon Pepper Seasoning *see note*
    • 2 tablespoons lemon juice
    • 1 tablespoon honey
    • Salt to taste *see note*

    For serving:

    • Lemon wedges

    Instructions
     

    For the wings:

    • Preheat oven to 250F. Adjust oven racks to upper-middle and lower-middle positions.
    • Dry the wings thoroughly with paper towels.
    • Line a baking sheet with aluminum foil, then place a rack on the foil. Spray the rack with nonstick cooking spray.
    • Toss the wings with baking powder and salt.
    • Place the wings on the baking tray in a single layer.
    • Place wings on the lower-middle oven rack and bake for 30 minutes.
    • Move wings up to the upper-middle rack and increase the oven temperature to 425 F. Bake for 40 โ€“ 50 minutes, until golden brown and crispy on both sides, using tongs to flip the wings halfway through.
    • Remove from the oven.
    • Toss with Lemon Pepper Sauce and serve.

    For the Lemon Pepper Butter Sauce

    • Combine the ingredients and mix thoroughly

    • Check out my post on Homemade Lemon Pepper Seasoning. I add garlic and onion powder to the recipe when making wings. I also use it in powdered form.
    Homemade Lemon Pepper Seasoning:
    • 1 tablespoon ground Dried Lemon Zest
    • 2 tablespoons black pepper (or to taste)
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    Salt to taste (I use none and salt separately)
    Salt added to the recipe will depend on the Lemon Pepper Seasoning used. If you use a store bought seasoning, you will probably not need to add salt. If you are making your own Homemade Lemon Pepper Seasoning without salt, add salt to taste. I use about ยฝ teaspoon since thereโ€™s already ยฝ teaspoon on the wings.

    What does Lemon Pepper taste like?

    The kick of pepper meets the zing of lemon in this highly addictive, all-purpose spice blend.

    Healthy Seasoning Recipe

    Homemade Lemon Pepper Seasoning is so much more natural and healthier than store bought mixes.

    Hereโ€™s the label from McCormickโ€™s Lemon Pepper Seasoning: salt, black pepper, citric acid, onion, sugar, garlic, calcium stearate, silicon dioxide, calcium silicate, celery seed, lemon oil, and FD&C yellow No. 5. Itโ€™s pretty much just salt and chemicals.

    Making your own Lemon Pepper Seasoning is so much healthier with only natural ingredients. Plus, you can control the amount of salt you use. While I have included salt as an ingredient, I leave the salt out completely so that I can salt each dish exactly how I want it.

    DIY is way cheaper than store bought

    I love saving money at the grocery store. Making my own homemade spice mixes is so much more economical than buying the premade mixes.

    Notice the first few ingredients on McCormickโ€™s Lemon Pepper Seasoning: salt, black pepper, citric acid, onion, sugar, calcium stearateโ€ฆ? On a product label, the ingredients are listed in order of predominance, with the ingredients used in the greatest amount first, followed in descending order by those in smaller amounts.

    Walmart sells McCormickโ€™s Lemon Pepper Seasoning for about $.53 an ounce.

    Considering that salt is the predominant ingredient, and Walmart sells salt (the Great Value brand) for 1.5 cents an ounce, itโ€™s easy to see how making your own spice mix is a much better deal.

    And if you normally throw away the peels after squeezing fresh lemons, the zest is pretty much free!

    (Penzeys sells their Lemon Pepper Seasoning for $3.35 an ounce. Just sayinโ€™. This stuff isnโ€™t cheap.)

    Ingredients

    Lemon Pepper is made with three ingredients:

    • dried lemon zest
    • pepper
    • salt

    I love the pure flavor and simplicity of Lemon Pepper made with just these three ingredients. (Actually two ingredients, because I always leave out the salt.)

    However, itโ€™s very versatile and you can make any additions to suit your own taste or the dish youโ€™re making. For some ideas on other spices you can mix in, here are some of the ingredients in blends from well-known spice shops: (Iโ€™ve left out the preservatives.)

    • Penzeys: salt, black pepper, citric acid, lemon peel, garlic, and minced green onion.
    • The Spice House: pepper, salt, citric acid, powdered lemon peel, MSG, garlic, and onion.
    • The Oakton Spice shop: black pepper, lemon zest, coriander, amchoor, aleppo chile flakes, green onion, thyme, turmeric, citric acid, and parsley.
    • Spice Jungle: Salt, spices, citric acid, sugar, onion powder, garlic powder, and lemon oil.
    • American Spice: Salt, Citric Acid, Black Pepper, Sugar, Minced Onion, Minced Garlic, Granulated Onion, Natural Lemon Juice Flavor, and Lemon Oil.

    Salt free Seasoning

    I make a no salt Lemon Pepper by leaving the salt out when making this Lemon Pepper recipe so that I can use as much of the seasoning as I want, without over salting the food. I salt the food separately so itโ€™s just how I like it.

    Organic

    I use organic lemons in my Dried Lemon Zest to avoid any pesticides that are on the peels.

    Lemon Pepper add-ins

    From the lists above, some common add-ins to make your Lemon Pepper Seasoning your own include:

    • Garlic powder
    • Onion powder
    • Sugar
    • Citric acid

    Some less common add-ins are:

    • Amchoor โ€“ (Amchur) dried green mango powder to add sourness and tang. Itโ€™s about five times as sour as lemon juice. One teaspoon of amchoor is equivalent to about 2 ยฝ - 3 tablespoons lemon juice.
    • Chili flakes
    • Thyme
    • Parsley

    If you want to buy Dried Lemon Zest, You can find it at Penzeys or on Amazon.

    Dried Lemon Peel is easy to make at home without the need for a dehydrator or even an oven.

    How to make Lemon Pepper Seasoning

    Lemon Pepper is very flexible in the amounts that you use. I use about 4 parts lemon zest to 1 part pepper. If you like more peppery zing, you can increase the amount of pepper.

    Simply combine the Dried Lemon Zest, black pepper, and salt โ€“ if using (I leave the salt out) โ€“ in a glass jar and shake to combine.

    If you donโ€™t have a spice grinder, zest your lemon as fine as possible and use cracked or ground pepper so that everything is already in small pieces.

    Lemon Pepper Powder

    If you would like your Lemon Pepper in powder form, simply give it a couple of pulses in a spice or coffee grinder.

    How to use

    • Lemon Pepper Seasoning is perfect for chicken, fish, shrimp, and steaks
    • Mix with a little oil and use as a lemon pepper spice rub
    • Lemon Pepper grilled chicken breasts (my current summer fave)
    • Use it in Lemon Pepper Chicken Wings
    • Sprinkle over roasted veggies or potatoes
    • Tossed with pasta
    • Mixed into dough for homemade crackers
    • Use in lemony dishes like my Lemon Caper Chicken or Creamy Lemon Artichoke Chicken Pasta for another dimension of lemon.
    • Sprinkle it on popcorn

    Does the seasoning go bad?

    This Lemon Pepper Seasoning should stay fresh for about two years in a tightly sealed container.

    Can you use fresh lemon zest?

    Because the flavor and aroma of dried zest is different from fresh zest, using fresh lemon zest would change the flavor and intensity of the mix. It would also have to be used within a week as fresh lemon zest is perishable.

    Instructions
     

    • Combine the dried lemon zest, black pepper, and salt if using in a jar. Shake to combine thoroughly.
    • If you want a finer powder, grind in a spice/coffee grinder.
    • Store in an airtight container at room temperature for up to 2 years. It will lose its potency as time passes. It will stay fresher longer if left unground.

    Notes

    • The ratio of lemon zest to black pepper is very flexible. If you want it more lemony, use 1 tablespoon black pepper. If you like it more spicy, use 2 tablespoons black pepper.
    • If you are using a spice grinder, you can use whatever type of pepper you have on hand.
    • If you donโ€™t have a spice grinder, zest your lemon as fine as possible and use cracked or ground pepper so that everything is already in small pieces.
    • My favorite add-ins are 1 teaspoon each of garlic powder and onion powder.ย

    The BEST Fruit Pizza Recipe

    With its sugar cookie crust, a dreamy cloud of cream cheese frosting, and juicy, colorful fresh fruit, itโ€™s sure to be a crowd pleaser!

    Creamy, fruity, juicy, sweet, and so pretty! This tried and true Fruit Pizza recipe always gets rave reviews!

    Easy Dessert

    Fruit Pizza is so easy to make. And better yet, it needs no special pizza pan. You can use a pizza pan if you have one, but if not, you can bake it on a piece of parchment or even right on the baking pan. A round pizza stone is another option.

    Favorite fruit for topping

    You can use any type of fruit for this recipe! Below are some of my favorites:

    • Strawberries
    • Kiwi
    • Mandarin oranges
    • Raspberries
    • Blueberries
    • Blackberries
    • Bananas
    • Mangoes
    • Grapes
    • Pineapple
    • Peaches
    • Avoid fruit that will brown quickly such as bananas or apples.

    Homemade or Premade Sugar Cookie Crust

    You can use a homemade cookie dough, or for an even easier crust, use Pillsbury Sugar Cookie dough that comes in the premade logs. Itโ€™s super easy and convenient.

    How to make Fruit Pizza

    Fruit Pizza is made in 3 easy steps:

    1. Bake the sugar cookie crust
    2. Spread on the cream cheese frosting
    3. Top with fresh fruit

    You can do this!

    Sugar Cookie Crust

    For the sugar cookie crust, we whip up a batch of my sugar cookie dough. Let it chill in the refrigerator for at least 30 minutes (or up to overnight). Chilling the dough prevents it from spreading too far while baking.

    If you have a 12-14 inch pizza pan, you can pat it into that. If you donโ€™t have a pizza pan, roll it out on a piece of parchment to a 12 inch circle (It will spread as it bakes.)

     I like to put plastic wrap on top of the dough to prevent sticking while rolling, then just peel the plastic off. If at any time the dough gets too sticky, stick it back in the refrigerator to firm back up.

    If a slightly uneven circle bothers you, cut a 12 inch circle out of cardboard and set it on top of the rolled out circle. You can trim off or push in the excess dough to fit perfectly into the circle.

    Slide the parchment and the rolled out dough onto a baking sheet and bake until the cookie is puffy and done.

    I like to slightly under bake mine so the cookie stays soft and chewy, I take it out when the top is just set, but before it begins to color.

    Remove the crust from the oven and let cool completely. (I stick it in the fridge to speed things along.)

    Cream Cheese Frosting

    While the crust is cooling, make the cream cheese frosting:

    • Make sure the cream cheese and butter are softened to room temperature for the smoothest, creamiest frosting with no lumps.
    • Using a stand mixer or a handheld mixer, beat the cream cheese until itโ€™s smooth. Add in the confectionersโ€™ sugar, vanilla, and a pinch of salt and beat until itโ€™s light and fluffy.

    How to decorate

    • When the cookie crust is cool, spread on the cream cheese frosting, leaving about a ยฝ inch border.
    • Arrange the fruit in a pretty pattern. Use your favorite fruits and designs. You really canโ€™t go wrong here so have fun with it!

    Optional Glaze

    Iโ€™ve covered the fruit with a glaze in these photos, but itโ€™s totally optional.

    To make the optional glaze, heat apricot preserves and sugar in a small saucepan until it softens and just begins to bubble. (Boiling it too long can make it sticky or brittle when it cools.)

    Press the mixture through a sieve to remove any chunks of apricot. Brush the glaze onto the fruit shortly before serving.

    Healthy Fruit Pizza

    You can make a healthier Fruit Pizza by:

    • Using low fat cream cheese or vanilla Greek yogurt instead of the cream cheese. Serve the pizza immediately if using Greek yogurt or the crust will get soggy.
    • Using a sugar substitute in place of the sugar.
    • Make it dairy-free: Just use vegan cream cheese in the frosting instead of traditional cream cheese.

    How to make Fruit Pizza Cookies

    If you want to make cute little individual fruit pizza cookies, use the dough to make sugar cookies. Then top each one with a dollop of cream cheese frosting and arrange the fruit on top.

    How to make in advance

    To make this Fruit Pizza in advance, you can bake and cool the crust, then wrap it well in plastic wrap. You can also make the cream cheese frosting and keep it in a closed container in the refrigerator for several days.

    Just before serving, spread the frosting on the cookie and top with fresh fruit.

    Ingredients
      

    For the Cookie Dough Crust:

    • ยฝ cup unsalted butter, softened to room temperature 115g
    • ยพ cup granulated sugar 150g
    • 1 large egg at room temperature
    • 1 teaspoon pure vanilla extract
    • 1 ยฝ cups all-purpose flour 190g
    • ยผ teaspoon salt
    • 1 teaspoon baking powder
    • ยฝ teaspoon baking soda

    For the Cream Cheese Topping:

    • 12 ounces cream cheese, softened 340g
    • ยผ cup butter, softened 57g
    • 1 teaspoon vanilla
    • ยพ cup powdered sugar (or more to taste) 85g

    Fresh fruit for topping:

    • Use a mixture of any of your favorite fresh fruits including: Strawberries, Kiwi, Mandarin oranges, Raspberries, Blueberries, Blackberries, Bananas, Mangoes, Grapes, Pineapple, and Peaches

    For the optional glaze:

    • ยผ cup apricot preserves
    • 1 tablespoon granulated sugar

    Instructions
     

    • Preheat oven to 350 degrees.

    For the cookie dough crust:

    • In the bowl of a stand mixer (or in a mixing bowl with a hand mixer) cream together the granulated sugar and butter until light and fluffy, about 2 minutes. Scrape down bowl.
    • Mix in egg and vanilla. Scrape down bowl.
    • Add flour, baking powder, baking soda and salt, then blend just until combined.
    • Chill in the refrigerator for at least 30 minutes or up to overnight.

    If using a pizza pan or baking dish:

    • Butter the pan (or spray with nonstick spray), then line with parchment paper and butter the paper.
    • Drop batter onto prepared pan, then spread into an even layer with hands coated in butter or nonstick cooking spray.

    If baking on a baking sheet (as shown):

    • Roll the dough out on a piece of parchment to a 12 inch circle (It will spread as it bakes.)
    • I like to put plastic wrap on top of the dough to prevent sticking while rolling, then just peel the plastic off. If at any time the dough gets too sticky, stick it back in the refrigerator to firm back up.
    • If a slightly uneven circle bothers you, cut a 12 inch circle out of cardboard and set it on top of the rolled out circle. You can trim off or push in the excess dough to fit perfectly into the circle.
    • Slide the parchment and the rolled out dough onto a baking sheet.

    To bake:

    • Bake until the cookie is set, about 10-12 minutes.
    • I like to slightly under bake mine so the cookie stays soft and chewy, I take it out when the top is just set, but before it begins to color.
    • Remove the crust from the oven and let cool completely. (I stick it in the fridge to speed things along.)

    For the cream cheese topping:

    • In the bowl of a stand mixer (or a mixing bowl using an electric hand mixer), whip the cream cheese, confectionersโ€™ sugar, and vanilla until light and fluffy.

    To assemble:

    • Spread topping over cooled crust.
    • Decorate pizza with fruit as desired.

    Optional glaze:

    • Heat the apricot preserves and sugar in a small saucepan until it softens and just begins to bubble. (Boiling it too long can make it sticky or brittle when it cools.)
    • Press the mixture through a sieve to remove any chunks of apricot. Brush the glaze onto the fruit.
    • Serve within a few hours of preparing for best results. Store in refrigerator.

    Notes

    • You can use a 1 lb package of Pillsbury sugar cookie dough instead of homemade dough.
    • You can bake the fruit pizza in a 12-14 inch pizza pan, a 9 x 13-inch baking dish, a quarter sheet pan, or roll out on a baking sheet as I have done here.
    • Be sure to chill the dough so itโ€™s not sticky.
    • If you are pressing the cookie dough into a pan, grease your hands to prevent sticking.

    Easy to Make Dried Lemon Zest with no dehydrator

    Dried Lemon Peel is easy to make at home without the need for a dehydrator or even an oven. While I sometimes stick mine in the oven if I want it in a hurry, it will also dry out at room temperature.

    Organically grown

    I prefer to use the zest from organically grown citrus so I donโ€™t get a concentrated dose of whatever pesticides might be on the skins. Also be sure to wash and dry the fruit before zesting.

    DIY Dried Citrus Peel

    Many different types of citrus zest can be dried in the same way:

    • Oranges
    • Tangerines
    • Mandarins
    • Lemons
    • Limes
    • Grapefruit

    How much Dried Lemon Zest equals fresh?

    Dried Lemon Zest is about a third of the volume of fresh zest, so 1 teaspoon of dried zest would equal 1 tablespoon of fresh zest.

    1 medium lemon yields about 1 tablespoon of fresh zest and 1 teaspoon of dried zest.

    How to Make Dried Lemon Peel

    1. Zest or peel the lemons
    2. Dry the peels in the oven or on the counter

    How to Zest a Lemon or other Citrus

    There are several ways to zest or peel the lemon:

    1. Fine grater or microplane โ€“ My favorite for lemon zest. It gets the zest very thin and small so thereโ€™s no need for chopping. Zest grated on a fine grater also dries the quickest and can be most easily pulverized into a powder.
    2. Cocktail zester โ€“ Peels the rind off in little strips. Super easy to use, but the zest will need some chopping to make it fine.
    3. Vegetable peeler- Takes the peel off in bigger strips. You can chop the peel fine with a knife if desired, or you can leave it in strips.
    4. Small, sharp knife โ€“ Trim the peel with the knife. Be careful not to get the white pith underneath the rind. Trim it off it you do.

    How to dry the Lemon Peel

    In the oven:

    For the quickest Dried Lemon Zest, dry the lemon peel in the oven at its lowest setting. My ovenโ€™s lowest setting is 170ยฐ F. The hotter the oven, the darker the dried peel will get.

    Spread the zest on a baking sheet lined with parchment paper. Let it bake until the peel is dry, shriveled, and crispy. If the zest is very fine, it should be finished in 30 minutes to an hour. It will take longer if the peel is in strips, several hours should do it.

    If Iโ€™m doing a big batch of lemon zest or want it quickly, I use the oven method.

    On the counter:

    You can also dry the lemon peel on the counter. Spread the peel on a dish or baking pan and let dry for several days, giving it a toss every day or so. Once again, the smaller the peel, the faster it will dry.

    When I use a single lemon, I zest it first, then just let the zest dry on the counter.

    Storing

    When the peel is completely dry, store it in an airtight container. It can be left as is, or ground into a powder in a spice grinder or blender.

    The flavor in these Cajun Chicken Breasts lies in the BEST Cajun Spice Mix! Simple to throw together with ingredients you probably have in your cupboard, it adds fantastic flavor.

    The secret ingredient in this Cajun Seasoning is brown sugar. The brown sugar caramelizes while itโ€™s baking, sealing in the juices and giving the chicken its beautiful crust and caramelized edges.

    Donโ€™t worry, it wonโ€™t make the chicken very sweet. It just adds the perfect balance to the mildly spicy flavors. Just a spoonful goes a long way.

    The Secret to super JUICY chicken is High Heat

    Baking the chicken breasts at a high temperature (425-450ยฐ F) seals in the juices and creates a beautiful golden crust. Turning on the broiler in the last few minutes gives those beautiful caramelized edges โ€“ my favorite part!

    Cooking it hot and fast is what makes it so juicy with those crispy, caramelized edges.

    I highly recommend using an instant meat thermometer. Itโ€™s a small investment for perfectly cooked chicken every time.

    How Long To Bake

    The key to perfectly baked chicken breasts is not overbaking them. Bake them until the internal temperature reaches 165ยฐF. This should take about 15-18 minutes depending on the size/weight of the breasts.

    To brine or not to brine

    I donโ€™t usually brine chicken breasts before baking them. In fact, when testing for this recipe, I brined half of the breasts. By the time they were done baking, I had forgotten which where brined and which werenโ€™t. It was difficult to tell the difference between the two.

    If you would like to brine the chicken, put 1 quart of cool water into a bowl. Stir in ยผ cup of salt. Add the chicken breasts and let them sit in the salted water for at least 15 minutes on the counter or in the refrigerator for up to 6 hours.

    When youโ€™re ready to cook, remove them from the brine and pat them off with a paper towel. Use a little less salt in the seasoning mix.

    How to make Oven Baked Cajun Chicken Breasts

    Prep the chicken breasts โ€“ use a meat mallet or rolling pin, hit the chicken breasts so that they are about 1 ยฝ cm thick at the thickest end. This ensures even cooking.

    Rub โ€“ rub in the Cajun seasoning, brown sugar, and oil. Add salt to taste if your Cajun Seasoning doesnโ€™t contain salt.

    Bake โ€“ in a 450ยฐ F oven until the internal temperature reaches 165ยฐF on an instant meat thermometer. This should take about 15-18 minutes depending on the size/weight of the breasts. For caramelized edges and crispy bits, turn on the broiler for the last few minutes of baking.

    Rest โ€“ Let the chicken rest for 5-10 minutes before cutting into it. This lets all those natural juices recirculate throughout the meat.

    Grilled Cajun Chicken Breasts

    Ingredients
      

    • 4 boneless skinless chicken breasts pounded to even thickness (about 1 ยฝ lbs, 680g)
    • 1 - 2 tablespoons Cajun Seasoning or to taste *SEE NOTE
    • 1 tablespoon brown sugar
    • 1 tablespoon oil I use olive or canola
    • 1 teaspoon salt or to taste, if Cajun Seasoning doesnโ€™t contain salt

    Optional garlic butter sauce

    • 2 tablespoons butter
    • 2 cloves garlic

    Instructions
     

    • Preheat oven to 450ยฐF
    • Using a meat mallet or rolling pin, hit each chicken breast to about 1 ยฝ cm at the thickest part. Make they are all the same thickness to ensure even cooking.
    • Combine Cajun Seasoning, brown sugar, and salt if using.
    • Line a baking pan with parchment paper or aluminum foil. Alternatively, bake directly in a baking dish.
    • Transfer chicken to the pan and toss with seasoning mix. Drizzle with the oil and rub seasoning all over to coat evenly.
    • Bake chicken in preheated oven for about 18 minutes, or until internal temperature is 165ยฐF (75ยฐC) using an instant meat thermometer.
    • Broil on high during the last 2-3 minutes of cooking until golden and the edges begin to caramelize.
    • Remove pan from oven. Let rest for 5 minutes before serving.

    For the optional garlic butter:

    • Melt the butter in a small pan. Add the garlic and sautรฉ for about 30 seconds, but donโ€™t let it brown. Combine the garlic butter with any pan juices and drizzle over chicken.

    You can use a store bought cajun seasoning or try my Easy Homemade Cajun Seasoning with ingredients you probably already have on hand:
    • 2ย tablespoonsย paprika or smoked paprika
    • 1ย tablespoonsย garlic powder

    While Cajun seasoning is a basic blend of cayenne, paprika, garlic powder, onion powder, salt, and pepper, Creole seasoning has some earthier notes with the addition of dried herbs like oregano, thyme, basil, and parsley.  

    What does it taste like?

    Cajun Seasoning has a bold spicy flavor (from the cayenne and paprika) with a subtle earthiness (provided by the garlic, onion, and herbs).

    Itโ€™s the ultimate all-purpose seasoning and definitely the spice mix that I canโ€™t do without. I use it on everything from burgers and steaks, to Cajun fries and chicken breasts, to soups, pasta, and rice.

    If you like it spicy, you can use more cayenne. If you like it milder, use a higher ratio of paprika.

    • Store in an airtight container for up to 6 months.

    Notes

    Iโ€™ve listed salt as an optional ingredient, however I never add it myself. I prefer to add salt separately so that I can have the exact amount of saltiness I want, while being able to use as much of the seasoning as I want.
