    What is Carne Asada?

    Carne asada literally translates to โ€œgrilled meat.โ€ Itโ€™s a traditional Mexican dish of thinly sliced steak thatโ€™s marinated in lime juice and seasonings, then grilled. It makes the most flavorful beef nachos!

    Best Steak for Nachos

    The best cut of beef for Carne Asada is skirt steak or flank steak. Skirt steak is more tender and flavorful than flank and can be cooked well done (for those who prefer well) without getting tough and chewy. Flank steak is a leaner cut of beef and best cooked rare or medium.

    The steak is sliced thinly across the grain โ€“ perpendicular to the lines you see on top of the steak.

    Tips for the BEST Nachos Recipe Ever!

    • Serve these loaded nachos immediately after baking so theyโ€™re fresh and crispy and the cheese is still melted.
    • Use a big enough baking sheet - Spread the chips slightly overlapping in a single layer before sprinkling on the cheese so that every bite is covered in melted cheesy goodness.
    • If your pan isnโ€™t big enough, put half the chips on the pan and sprinkle with half the cheese, then top with the rest of the chips and the remaining cheese.
    • Putting the steak on after the chips have been baked prevents the steak from drying out.
    • For extra crispy baked nachos โ€“ bake the chips for 5 minutes before topping with cheese, then return to oven until the cheese is melted.
    • For crispier nachos โ€“ serve the toppings on the side.
    • Use the right cheese (see below)

    The Best Cheese for Homemade Nachos

    Use a type of cheese that melts well and grate it yourself for the best nachos. Pre-shredded cheese contains preservatives like cellulose to keep the shreds from clumping together in the bag. That also means they don't melt together as well when cooking. Your best bet is a block of cheese that you grate yourself.

    My favorite cheeses are extra sharp cheddar cheese and Monterey Jack cheese. You could also use Colby jack or pepper jack cheese.

    The Best Tortilla Chips to use

    Use a tortilla chip thatโ€™s thick enough so your oven baked nachos hold up under lots of toppings without breaking. Thinner tortilla chips break easier and also get soggy easier.

    How to Make

    Make the Carne Asada:

    Combine the marinade ingredients and pour over steak in a dish or in a gallon sized sealable bag. Store in the refrigerator and marinate for at least 2 hours or as long as overnight. The longer you can marinate the meat, the more flavorful and tender it will be.

    Grill the steak or cook it in a large skillet over medium heat until it reaches the desired doneness (130ยฐ-140ยฐ for medium rare, 140ยฐ-150ยฐ for medium, and 150ยฐ-160ยฐ for medium well). Let rest 5 minutes, then slice against the grain, then into bite-sized pieces.

    You can make the Carne Asada up to a few days ahead of time and chop and reheat when youโ€™re ready to serve.

    Bake the Tortilla Chips

    Spread the chips in a single layer and slightly overlapping in a sheet pan (I used 18 by 13-inch half sheet pan).

    For the Carne Asada:

    What is Chocolate Lasagna?

    Chocolate Lasagna is a no-bake dessert with light, fluffy, creamy layers of Cool Whip, chocolate pudding, and cream cheese all on an Oreo cookie crust that just melts in your mouth.

    One of our favorite chocolate no-bake dessert recipes, itโ€™s also called Chocolate Lush, Sex in a Pan, Chocolate Dream, Robert Redford Dessert, or Better Than Anything Dessert.

    Itโ€™s made of 4 layers:

    • Oreo crust layer โ€“ a no-bake Oreo cookie crust made of Oreo cookie crumbs and melted butter thatโ€™s pressed into a baking dish
    • Cheesecake layer โ€“ This smooth and creamy layer tastes like a light and fluffy cheesecake. Cream cheese is whipped until fluffy, then a container of Cool Whip is folded in.
    • Chocolate pudding layer โ€“ Instant chocolate pudding mix is whisked with milk for this super quick and easy chocolatey layer.
    • Cool Whip layer โ€“ Another carton of Cool Whip is spread on top and sprinkled youโ€™re your topping of choice: chocolate shavings, mini chocolate chips, or Oreo crumbs.

    Ingredients in this recipe:

    • Oreos - use the regular Oreos (not double stuffed) and donโ€™t remove the creamy centers
    • Butter โ€“ salted or unsalted
    • Cream cheese โ€“ For a rich, tangy filling. Make sure itโ€™s softened.
    • Sugar - sweetens the cream cheese layer
    • Milk โ€“ thins the cream cheese for a spreadable consistency
    • Cool Whip โ€“ makes the filling light and fluffy. You can substitute homemade whipped cream, but Cool Whip tends to hold up better without seeping water.
    • Chocolate pudding โ€“ be sure to get the INSTANT chocolate pudding. It thickens after just a few minutes of stirring.
    • Chocolate: for garnishing the top. You can use mini chocolate chips, chocolate shavings, or crushed Oreos.

    How to Make:

    • Oreo crust layer โ€“ Process the Oreos (with their cream) in a food processor until theyโ€™re crumbs (or in a ziploc bag with rolling pin). Add the melted butter and process until combined. Press into an even layer in a 9โ€x13โ€ baking dish. Refrigerate (or put in the freezer) while you prepare the cheesecake layer.

    • Cheesecake layer - In a bowl, beat together the cream cheese with the milk and sugar until smooth and creamy. Fold in the Cool Whip. Carefully spread over the Oreo crust. Refrigerate while you prepare the chocolate pudding layer.

    • Chocolate pudding layer โ€“ Whisk the instant chocolate pudding with cold milk until it thickens. Carefully spread over the cheesecake layer. Refrigerate until it sets, about 5-10 minutes.

    • Cool whip layer - Spread the Cool Whip over the chocolate layer and top with your favorite topping: chocolate shavings, mini chocolate chips, or Oreo crumbs.  Refrigerate for at least 4 hours or overnight. You can also freeze it for an hour or two before slicing.

    Tips

    • Use regular Oreos, not Double Stuf, and do not remove the cream centers from the cookies. 36 cookies = 3 cups of crumbs.
    • Be sure to use INSTANT pudding. Do not use Cook & Serve.
    • Soften the cream cheese at room temperature before whipping so it gets light and fluffy.
    • Putting the dessert into the freezer after each step firms up the layers and makes it easier to spread the next layer, especially if your kitchen is hot or humid.
    • You can use an equal amount of homemade whipped cream instead of Cool Whip.  Beat 3 cups of heavy whipping cream until medium peaks form.
    • Note that homemade whipped cream will not keep its texture as long as Cool Whip and will start to seep water and deflate.
    • For a topping of chocolate shavings, use a vegetable peeler to shave along the side of a bar of bittersweet chocolate, creating ribbons to sprinkle on top.
    • You can make this dessert up to 2 days ahead, keep refrigerated.
    • Chill before serving so the layers have time to firm up. Take the dish out right before serving otherwise it will get too soft for slicing.
    • For the neatest, cleanest slices with straight edges, freeze the dessert for about 30 minutes to 1 hour before slicing.
    • To cut clean pieces run your knife under warm water and when slicing, continually wipe the knife clean.

    Recipe FAQs

    Can I use whipped cream instead of Cool Whip?

    While homemade whipped cream can be used and would have a richer flavor, itโ€™s not as stable as Cool Whip and will start to deflate and seep water. If you do use whipped cream, try stabilizing it with gelatin so that it stays fluffy longer. See how I make stabilized whipped cream with gelatin here.

    To replace 16oz of cool whip: beat 3 cups of heavy whipping cream on medium speed until soft peaks form then add 3 tablespoons of sugar (or powdered sugar) and continue beating until medium peaks form.

    What type of pudding should I use?

    Use INSTANT chocolate pudding mix and not the Cook & Serve variety. Instant pudding is simply whisked with cold milk. It does not need to be cooked prior to using.

    I only have the cook and serve type pudding mix. Can I use it?

    If you only have Cook & Serve pudding, cook according to package directions and cool before layering.

    Can I use other types of Oreos?

    This recipe uses regular Oreos. Double Stuf Oreos will give a greasier crust. Different flavors of Oreos would give a fun flavor variation.

    Can I freeze chocolate lasagna?

    Yes, cover and freeze for up to 2 months. Let thaw on counter to soften before serving. Itโ€™s also equally delicious served semi-frozen. Freezing works best when using Cool Whip rather than whipped cream.

    Can this dessert lasagna be made into a trifle?

    Yes. Just chop or break the Oreos into bite-size pieces, then layer them into the bottom of the trifle dish, followed by the cream cheese layer, pudding, and Cool Whip. Repeat all 3 layers until the trifle dish is filled, then garnish with your chosen topping.

    These can also be made in individual servings in small glasses or jars.

    What is a Mangonada?

    A cross between a refreshing drink and a healthy dessert, a Mangonada is a frozen slushie made from sweet, juicy mangoes with swirls of tangy, spicy chamoy sauce โ€“ an addictive combination!

    Topped with fresh mango chunks, a sprinkling of tajin chili lime seasoning, and garnished with a tamarind straw, itโ€™s a fun and tasty treat.  

    Also called Chamoyada, Mangoneada, or Chamango, theyโ€™re a popular Mexican treat, found in palaterias (ice cream shops) and sold by street vendors in Mexico. Theyโ€™re showing up more and more in the US, and itโ€™s easy make your own at home.

    Ingredients

    • Mangoes โ€“ you can use fresh sweet mango or frozen mango chunks. If using fresh mango, freeze the chunks before using so the slushie is icy and thick. Youโ€™ll also want some fresh mango chunks to sprinkle on top as a garnish.
    • Mango juice or nectar โ€“ mango juice provides the liquid to process the frozen mango chunks into a frozen slushie without diluting the mango flavor.  You can use store bought mango juice or nectar, or make your own with fresh or thawed, frozen mangoes. Alternatively, use another tropical juice flavor like passion fruit, guava, or pineapple.
    • Lime juice โ€“ adds a bright and tangy flavor to the mango. You can also use lemon juice.
    • Sugar โ€“ add a little sugar to bring out the flavor of the mangoes if theyโ€™re not sweet enough
    • Ice cubes โ€“ makes the slushie cold and icy
    • Tajin โ€“ (pronounced ta-HEEN) Tajin is a chili lime seasoning made of dried mild red chili peppers, dehydrated lime juice, and sea salt. This chile-lime salt can be found in Latin grocery stores or online. In LA, I can find it in the produce section of my local supermarket. It's used to coat the rim of the glasses and to sprinkle on top.
    • Chamoy โ€“ Chamoy is a very popular condiment made from dehydrated fruit (such as apricot, mango, or plums), chili powder, dried hibiscus flowers, (Jamaica or roselle flowers), salt, sugar, and citrus juice. Itโ€™s sweet, sour, salty, spicy, and a little tart. It can be found in Latin grocery stores or online. In LA, I can find it in the produce section of my local supermarket.
    • Tamarind candy straws (Tarugos) - optional for serving, but a lot of fun! A mangonada straw is made of sticky tamarind fruit and coconut sugar combined to form a sweet candy straw rolled in chili powder. It can be found in Latin grocery stores or online.

    How to make

     To start this Mango Chamoyada recipe, pour two tablespoons chamoy and tajin into two small saucers. Dip the rims of the glasses first into the chamoy and then into the tajin.

    In a blender, combine the frozen mango chunks, mango nectar or juice, lime juice, sugar, and ice. Blend until smooth. It will have the consistency between a smoothie and a sorbet.

    Swirl some chamoy on the sides of two 16oz glasses and let it drip down to the bottoms of each glass.

    Pour the frozen mango mixture into the glasses.

    • Use ripe mangoes for the sweetest mango flavor.

    • Strawberries: for the fresh strawberry milk in the blender, I use fresh strawberries, but you could also use thawed frozen berries. (Unless you want more of a smoothie texture, in which case you can use them frozen. For the strawberry syrup, you can use fresh or frozen berries.
    • Milk: You can use any type of milk, dairy or nondairy
    • Sugar: If youโ€™re making the fresh strawberry milk in the blender, add sugar or other sweetener to taste. For a sugar-free alternative, we like an erythritol sweetener like Lakanto. Both sugar and erythritol can be used in the syrup.

    How to make with a homemade strawberry syrup

    Prepare the strawberry syrup:

    2. Strain the strawberries out of the simple syrup through a fine mesh strainer, being careful not to press down on the berries or the syrup will be cloudy.

    What is a Pittsburgh Chicken Salad

    A regional favorite from western Pennsylvania, Pittsburgh Chicken Salad is a simple, house salad topped with slices of grilled chicken and a layer of crispy fries. Of all the food Pittsburgh is known for, (think Primanti Brothers sandwiches, pierogies, potato patch fries, and burnt almond torte) this is my favorite!

    It starts on a base of your favorite lettuce. While romaine and iceberg lettuce are common, you can use any lettuce mix you like. Cherry tomatoes, cucumber slices, and cheddar cheese are the most common additions, but feel free to add any of your other favorite salad ingredients โ€“ red onion slices, bell pepper slices, olives, shredded carrot, croutons, or hard-boiled egg.

    Itโ€™s topped with slices of juicy grilled chicken breast and a pile of crispy fries. Itโ€™s then drizzled with your favorite dressing. Ours is ranch, but Italian, blue cheese, or thousand island are popular too.

    Pittsburgh Steak Salad

    For a Pittsburgh Steak Salad, substitute thinly sliced grilled steak for the chicken breast. Use your favorite cut of steak cooked on the grill or in the skillet.  Try flank, sirloin, strip, or ribeye.

    Who invented the Pittsburgh Salad?

    Jerryโ€™s Curb Service just outside of Pittsburgh in Beaver, Pennsylvania, claims to have invented this western Pennsylvania chicken salad in the 60โ€™s when a customer requested everything that could be on a steak sandwich, but without the bread. Donna Reed, the wife of founder Jerry Reed, piled fries, steak, and salad dressing on top of a bed of lettuce.

    Fries add texture, flavor, crunch, and warmth. They make a salad hearty enough to be a complete meal and are the perfect substitution for croutons. Once you try it, youโ€™ll be hooked!

    You can find a Pittsburgh Salad on many menus across the city. However, In Pittsburgh, itโ€™s not referred to as a โ€œPittsburgh salad.โ€ Itโ€™s often on menus as "steak salad" or "chicken salad."

    • French fries โ€“ they key ingredient in a Pittsburgh style salad. Use whichever style of fries you like, as long as you make them nice and crispy. Seasoned fries add extra flavor. Frozen fries make a quick and easy salad.
    • Chicken breast โ€“ grilled or cooked in a skillet then sliced. Season the chicken as you like โ€“ a little salt and pepper, some Italian seasoning, or cajun seasoning (my fave and can also be used to season the fries). For a Pittsburgh Steak Salad, use steak instead
    • Lettuce โ€“ Use your favorite lettuce mix. Pittsburgh Salad is usually served on top of a simple, house style salad that contains romaine or iceberg lettuce that holds up well to the heat of the grilled meat and fries.
    • Veggies - Cherry tomatoes and sliced cucumber are most common. You can also add sliced red onion, bell pepper, shredded carrot, or olives
    • Salad dressing โ€“ Ranch is the most popular dressing for a Pittsburgh Salad. Itโ€™s perfect for drizzling on top as well as serving on the side for dipping. Other options include Italian, blue cheese, or thousand island.
    • Cheddar cheese - grated, or a blend of cheddar and mozzarella

    • Cook chicken breast on the grill or in a skillet until done. Let rest for 5 minutes then cut into slices.

    Can you make simple fruit syrup with other fruits?

    Yes, you can! The same method can be used for other fruits including raspberries, blueberries, blackberries, cherries, peaches, apricots, passion fruit, and rhubarb.

    Try adding herbs such as basil, thyme, mint, or lemon verbena. Or give it a kick with chilies or ginger.

    Can I use less sugar?

    You can use less sugar, however, it will lose its syrupy consistency. You can also use a non-sugar sweetener, like erythritol (Lakanto is my current fave).

    How long does strawberry simple syrup last?

    It should last up to 3 weeks in the refrigerator. If any crystallization occurs, just warm it up to dissolve the crystals.

    Ingredients
      

    • 1 lb strawberries about 3 cups when sliced
    • 1 cup granulated sugar
    • 1 cup water
    • Optional: pinch of salt and/or lemon juice to taste

    Instructions
     

    • Clean, hull and slice the strawberries.
    • Combine the strawberries, water, and sugar in a saucepan and bring to a boil over medium-high heat.
    • Reduce the heat to a simmer and simmer for 15 minutes. The berries will soften and lose their bright color and the liquid will be deep red.
    • Strain the strawberries out of the simple syrup, being careful not to press down on the berries or the syrup will be cloudy.
    • Store in the refrigerator for up to 3 weeks.

    Notes

    • A pinch of salt brings out the flavor of the strawberries.
    • If your strawberries need a boost of flavor, a strip of lemon peel can be added when simmering the berries. Alternatively, you can add a bit of lemon juice to taste to the finished syrup.
    • To chill the syrup quickly, put in an ice bath.
    • If you prefer a thicker syrup for use on pancakes or waffles, you can simmer it for several minutes longer till the liquid reduces and thickens more.

    • Strawberries โ€“ sweet, ripe, in-season berries will make the sweetest, most flavorful juice. If youโ€™re using out-of-season berries without much flavor add a bit of lemon or lime. Thawed frozen strawberries can also be used.
    • Water โ€“ I like to dilute the juice with a 1:1 ratio of water for the perfect consistency
    • Sugar โ€“ (optional) You can add sugar or another sweetener if using out-of-season berries or if you like a sweeter juice. You can also use a liquid sweetener (like honey or agave) or a keto sweetener (like erythritol).

    Other optional ingredients:

    • Pinch of salt โ€“ brings out the flavor
    • Lemon or Lime Juice โ€“ add some freshly squeezed lemon or lime juice to intensify the flavor or if youโ€™d like your juice a little tarter.

    How to make

    In a juicer:

    To make strawberry juice in the juicing machine, clean and hull the strawberries, then press them through the tube. You can drink the juice as is or dilute with an equal amount of water and add sugar to taste.

    How to juice with a blender:

    • Clean and hull the strawberries
    • Process in the blender until pureed
    • Add water and sugar to taste and briefly blend again to combine

    You can also use a handheld immersion blender. Just blend the berries in a deep enough bowl so that they donโ€™t overflow.

    Tips:

    • You can serve the juice full strength or dilute it with water. I like a 1:1 ratio of juice to water. (For every cup of pureed strawberries, add 1 cup of water.) You can dilute the juice to your taste.
    • You can also dilute the strawberry juice with sparkling water or coconut water
    • You can serve the pure strawberry juice as is, or you can boost the flavor with sugar or other sweeteners (such as agave or keto-friendly erythritol), a pinch of salt, lime, or lemon juice.
    • Adjust the amount of sugar or sweetener used depending on how sweet your berries are.
    • My blender makes a perfectly smooth juice, but if you would like an even thinner juice with no pulp, strain the juice through a fine mesh strainer, cheesecloth, or a nut bag.

    • Orange Strawberry Banana Juice โ€“ add a banana with the strawberries and thin with orange juice.
    • Strawberry Acai Juice โ€“ add 1 teaspoon acai powder when pureeing the strawberries.
    • Strawberry Watermelon Juice โ€“ puree watermelon with the strawberries. Because of the high water content of watermelon, additional water may not be needed.
    • Strawberry Peach Juice โ€“ thin with peach juice or add peach chunks when pureeing the strawberries
    • Strawberry Apple Juice โ€“ thin with apple juice or add apple chunks when pureeing the strawberries
    • Sparkling Strawberry Juice โ€“ dilute with sparkling water
    • Frozen Strawberry Juice Slushie โ€“ add ice cubes to the puree and blend.
    • Strawberry Pineapple Juice โ€“ thin with pineapple juice or add pineapple chunks when pureeing the strawberries
    • Strawberry Mango Juice - thin with mango juice or add mango chunks when pureeing the strawberries
    • Strawberry Popsicles โ€“ pour into popsicle molds and freeze. I like to add sugar and lime juice to the mix.

    How to store:

    Strawberry Juice will keep in the refrigerator for 2-3 days.

    How to freeze:

    Freeze strawberry juice in ice cube trays or in plastic freezer bags for 2-3 months. You can use them as flavored ice cubes, add frozen to slushies and smoothies, or thaw to use as juice.

    Can you use a blender to juice?

    Yes, a blender is a good alternative to a juicing machine. Depending on the fruit, there may be some pulp, but that can be strained out with a strainer. The advantage is that a blender is much easier to clean than a juicer.

    Can you juice frozen fruit?

    Yes, frozen fruit juices well. Let the fruit thaw and be sure to include any of the juice that comes out during the thawing process. Freezing and thawing fruit breaks down the cell walls allowing the water held in the cells to come out easily. Thatโ€™s why youโ€™ll naturally see juice (and mushier fruit) when you freeze and thaw it.

    Pasta โ€“ you can use any shaped pasta. Try rigatoni, spaghetti, fettuccine, penne, or even a small shape like orecchiette.

    Ricotta โ€“ use the best quality, whole milk ricotta you can find. Skim milk ricotta will be grainy and wonโ€™t make a creamy sauce. For the creamiest sauce, try my Homemade Ricotta made with milk and cream.

    Parmesan cheeseโ€“ you can also use pecorino romano or pana gradano.

    Lemon โ€“ zest and juice from about 2 lemons for a fresh and sunny flavor

    Extra virgin olive oil โ€“ a little olive oil makes the sauce creamier. You could substitute butter or a little cream

    Garlic โ€“ itโ€™s totally optional, but if youโ€™re a garlic lover, it adds a flavor dimension

    Arugula โ€“ adds a bright, peppery flavor. You can leave it out completely or substitute spinach, kale, or fresh basil.

    How to make Lemon Ricotta Pasta

    Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup pasta cooking water, then drain the pasta.

    Make the ricotta cheese pasta sauce: In the same pot (on the still warm burner with the burner turned off) add the ricotta, Parmesan, lemon zest and juice, olive oil, minced garlic, and salt and pepper to taste, and whisk until well combined.

    Add ยฝ cup reserved pasta water to the sauce and whisk until smooth.

    Combine the pasta, sauce, and arugula: Add the pasta and continue to stir until the noodles are well coated. Add more pasta water as needed for the consistency you like. Keep in mind that it will thicken as it cools.

    Stir in the arugula if using.

    Divide the pasta among bowls and garnish with grated Parmesan, black pepper, and red-pepper flakes.

    Tips for the best Pasta with Lemon and Ricotta

    • Generously salt the pasta water. Your pasta water should taste like the sea. This flavors the pasta as well as the sauce when it is mixed in.
    • Save the pasta water! The starchy water is crucial in helping the sauce to emulsify. A trick I use so that I donโ€™t forget to reserve a cup of water before draining โ€“ set the measuring cup inside the strainer in the sink while the pasta is cooking. When it comes time to drain the pasta, youโ€™ll wonder why you put that there!
    • Cook the pasta al dente so that it has a nice bite to it and doesnโ€™t become soggy sitting in the warm sauce.
    • Never rinse the pasta โ€“ you want the starches in the cooking water to cling to it.
    • Use the best quality, whole milk ricotta you can find. Skim milk ricotta will be grainy and wonโ€™t make a creamy sauce. For the very best sauce, use my homemade ricotta made with milk and cream.
    • Use the ricotta at room temperature.
    • Use very finely and freshly grated parmesan
    • Stir or whisk vigorously to make the sauce creamy before adding the pasta.
    • Use enough salt to bring out the delicate flavors.
    • Stirring in the arugula at the very end will soften it without it becoming to wilted.
    • Serve the pasta immediately after tossing with the sauce. The sauce will thicken as it cools.

    Variations and add-ins

    • Stir in marinated artichoke hearts
    • Top with fried capers
    • Substitute spinach, kale, watercress, or fresh basil for the arugula
    • Add peas or asparagus in the last few minutes of the pasta boiling,
    • Add a protein โ€“ chicken, shrimp, salmon, or sausage

    How to store and reheat leftovers

    Store leftovers in an airtight container in the refrigerator for up to 3-4 days.

    The sauce will thicken and separate somewhat when it cools. To reheat, add a splash of milk or water and reheat on the stovetop, or warm in the microwave.

    According to their website, the pistachio latte from Starbucks contains: milk, pistachio sauce, espresso, and a salted brown butter cookie flavored topping.

    Iโ€™ve created a recipe that doesnโ€™t require any artificially flavored syrups that leave a chemical aftertaste.

    Hereโ€™s what youโ€™ll need for this recipe:

    • Espresso โ€“ 1-2 shots from an espresso machine, a French press, or instant espresso. You can also use strong brewed coffee.
    • Pistachio syrup โ€“ My DIY Homemade Pistachio Syrup is a pistachio infused simple syrup with all-natural flavors. It gives a wonderful pistachio flavor to the latte that canโ€™t be matched by artificial flavorings, and itโ€™s easy to make.

    Iโ€™ve also included a sugar-free version if you want enjoy your cuppa without all the sugar.

    Starbucks at Home recommends adding a little almond extract in the pistachio syrup so Iโ€™ve added that as an optional ingredient.

    • Milk โ€“ you can use any kind of milk you like from whole milk, low-fat milk, coconut milk, oat milk, to almond milk.
    • Salted browned butter โ€“ half of the salted brown butter is stirred into the espresso and the other half is mixed with brown sugar and sprinkled on top.
    • Brown sugar โ€“ for the salted brown butter topping.

    How to make Pistachio Latte

    Step 1: Brown the butter

    • Heat the butter in a light-colored pan over medium heat. Stir frequently until it melts, foams, and the solids start to turn golden.
    • Remove from heat and set aside half to stir into the espresso.

    • Prepare the espresso using an espresso machine, a French press, or instant espresso. You can also use strong brewed coffee. Add half of the browned butter.

    Ingredients

    Sugar and water โ€“ to make a simple syrup

    Pistachios โ€“ roasted pistachios are infused in the simple syrup to extract their flavor. I use roasted, lightly salted pistachios because I love the pop of flavor the salt adds. If you have unsalted pistachios on hand, you can also use them, just add a pinch of salt. If your pistachios are very salty, rub them in a towel first to remove some of the salt.

    Almond extract โ€“ optional, but it adds more nutty flavor to the syrup. I add it in the last few minutes of simmering to remove any boozy aftertaste.

    How to make Pistachio Syrup

    Chop the pistachios.

    Combine the sugar, water, and pistachios in a small pan.

    Bring to a boil, stirring until the sugar is dissolved, then lower the heat to a simmer. Simmer on low for 8-10 minutes. (If using, add the optional almond extract in the last 2-3 minutes of simmering to remove the boozy taste.)

    Remove from heat. Let the syrup rest for 15 minutes to infuse the flavor. Strain through cheesecloth and a fine mesh strainer to remove the pistachio pieces.

    Pour into a jar and store in the refrigerator.

    Sugar free Pistachio Syrup

    Use a granulated sugar substitute like Swerve (erythritol) or Lakanto (erythritol and monk fruit) instead of sugar to make a sugar free pistachio syrup.

    After the pistachio syrup has simmered, sprinkle a pinch (no more than eighth of a teaspoon) of xanthan gum over the mixture, and quickly whisk until dissolved. Xanthan gum thickens it a bit and helps prevent crystallization.

    A certain amount of crystallization will occur when using Swerve or Monk fruit, and the syrup will be opaque. Giving it a good stir and heating it briefly in the microwave will temporarily remove any crystals.

    How to store

    • Store in the refrigerator for up to 2 weeks.
    • It can also be frozen in individual portion sizes in an ice cube tray.
